Default Looking for ways to work veggies into breakfast

Hey everyone- I do a good job incorporating veggies into my diet, but cooked breakfast is always starchy/carby with maybe some fruit. But for the most part it remains a vegetable free meal. I can make a ton of egg and veggie breakfast, but bf doesn't eat eggs and I want to get him to eat vegetables too.

Any ideas? How do you healthy up breakfast?

My go to's are fried eggs whites, steel cut oats, and bran or shredded wheat with fruit.

I like a breakfast "salad" - fresh/raw broccoli, carrot chips, orange slices, maybe slivered almonds and a little raspberry vinaigrette. Also, tossing a bunch of greenery in to the blender for a morning green smoothie is an awesome way to start the day hydrated and powered by plants!

Green monster smoothies? I haven't tried one yet, but I hear they taste better than they look.

Add veggies (bell peppers come to mind) to hashbrowns/potatoes.

a veggie wrap (with some grated cheese sprinkled in) would work for me. You could grill it to give it crispness and melt the cheese.

OMELETTES are really nice with veggies; either in them or make the omelette and put heated veggies in the middle with a tiny bit of melted cheeze. You can saute the veggies a bit first or use leftovers from the day before.

I like mushroom & onion omelettes with chz inside; or make a plain omelette and fill with sauteed ham, onion, mushrooms, tomatoes and melt some chz inside as well. You can add whatever veggies you want.

Don't forget QUICHES -- you can make them with any of your favorite veggies as well; and leftovers work well in them too.

How about a VEGGIE PITA PIZZA? I usually have them for lunch or dinner, but there are no rules that say you can't have them for breakfast.

Oh, then there is the option of making pumpkin or carrot muffins; or zucchini or pumpkin loaf; or pumpkin custard ...

I usually eschew frozen foods and try to minimize how much I microwave... but I've been picking up frozen bags of mixed veggies and zapping a big bowl in the mornings - usually to have with eggs and sausage. Zucchini/pepper/onion/carrots/green beans or broc/cauli/carrot blends, to be more precise. I've also really struggled with keeping my veggie intake as high as I want it to be, so for now this is an acceptable tradeoff. I know fresh would be much better, but if this is the level of easy/quick that I need right now, it's better than no veggies at all!

Well, why not have chicken fajitas for breakfast? Veggie burger taco. Turkey sausage+veggie taco. Vegetable soup in the winter, I've been known to eat chili for breakfast.

There is no breakfast police that says you can only eat cereal, eggs and fruit for breakfast.

I eat leftovers for breakfast, since I've never been a huge breakfast-food fan. So veggie lasagna (with strips of zuchini and/or eggplant in place of some or all of the noodles), stir fries, veggie-based casseroles and/or pizzas and/or sandwhices.... all fair game.

One breakfast (or lunch or dinner) I especially love is french-style green beans, onions, and bell pepper simmered in spagheti sauce (with or without meat), served over baked potatoes (prefereably yukon gold).

The sauce tastes better the day after making, so it's always perfect for breakfast. Bake the potato until done (or nearly done). Open it up and scoop some sauce on top, then nuke for another minute or so until the sauce is bubbly.

I second the omelet idea. I often saute spinach and onions, mushrooms and onions, asparagus and onions (guess I like onions!), tomatoes, garlic, etc. in a tablespoon of olive oil. I dump out the veggie saute on a plate and scramble a few eggs in the same pan and then return the veggies to the pan and mix them all up together! If I am in the mood, I will add some cheese (usually mozzarella) and sometimes some salsa. Add my morning cup of coffee with skim milk and I have a very filling and delicious breakfast!
