WW Fairy Cakes

  • Especially for Teel and everyone else

    Lemon Fairy Cakes

    Makes 9 cakes, 109 cals / 2 WW points per cake (not sure how good that is but they were tasty - everything in moderation)

    75g /2.75oz self raising white flour
    50g/1.75oz polyunsaturated margarine
    50g/1.75oz caser sugar
    1 egg, beaten
    finely grated zest of 1 lemon
    1 tablespoon fresh lemon juice


    1. Preheat the oven to Gas Mark 5/190C/fan oven 170C. Line a 9 hole bun tin with paper cases

    2. Sift the flour into a bowl.

    3. In a seperate bowl beat the margarine and caster sugar together until the mixture is pale and fluffly.

    4. Add the beaten egg, lemon zest and lemon juice with 1 tablespoon of the flour into the mixture and mix well.

    3. Add the remaining flour to the lemon mixture and fold it in throughly.

    4.Divide the mixture between the paper cases and bake for 15 minutes, until the sponges are springy to the touch.

    Replaced the lemon with 2 tablespoons of cocoa powder in the second lot I made to give a little variation.

  • Thanks Smiling Sal I have passed the rec on to friends and family. I haven't the room to cook cakes and there is only me so I won't be making any in my tiny kitchen but there is nothing to stop my family from making me some when I caom for Easter!
