Default who said eating delicious cant be healthy??

So its lunch time here in hot florida lol. I just went grocery shopping but mostly meat n veggies and don't trust myself stopping to get a fast food salad. So I came home and thought I can make a panini. Omgggg its soooo good.

I used 2 slices of low cal wheat bread publix brand. 90 cals. 3 slices ham 70 cals and the new thin sliced provolone cheese from sargento 40cals a slice. I used 2 so 80. And used smart balance butter on each side of the bread. A tablespoon 30 cals. I melted the cheese on the bread like grilled cheese and then added the ham when it was melted. Layed a heavy plate on the top to grill it all together and done. Sooooo delicious. And I added a cup of strawberrys on the side

What's everyone having??

BBQ beef that I just made with trimmed top round roast, wtih some cole slaw on ak-mak crackers.

I've been toasting my sandwiches like they do at subway or quiznos I like being home for lunch; I'm probably going to get a toaster oven for my classroom now, haha!

I had chicken, zucchini, roasted red peppers and tomato inside a whole wheat pocket, toasted in the toaster oven. Yummy!

Not for lunch today but a favorite of mine- homemade WW tortilla with some sriracha hummus spread inside, turkey lunchmeat then topped with tablespoonfuls of homemade zucchini salsa. Pure spicy yumminess. Ideally better with bell peppers or your favorite veggies for some crunch.

I had a homemade freezer burrito: grated red onion cooked with lots of grated zucchini, Monterrey jack stirred in, a little bit of rice, cannelini beans, scallion and cilantro all wrapped into high fiber tortillas. I freeze them on a tray until solid then put them all in a freezer bag.
I topped one with some salsa and sriracha.

that all looks yummy!

i had a peice of grilled salmon, and some roasted (in pam) veggies including a red bell peppers, some mushrooms, and a white zucchini!

I had a peach, 3oz of baby carrots and a tofu "egg salad" sandwich with a ton of spinach on it!! (2 slices 45 calorie and delightful whole wheat bread, 85 grams of extra firm tofu, 1tbs of light miracle whip, 1 teaspoon of mustard and pepper) my whole lunch for 290 calories, 7grams of fat and 17 grams of protein!

I microwave the burritos for 3 minutes or so wrapped in a damp paper towel. If it's still cold, I just put it in a little longer.

All of the posts about sandwiches made me want one, so I made myself a "cheesesteak" with onions, peppers, turkey, cheese, romaine, and lite mayo on a Flat Out. It hit the spot!

Munchy - I love the idea of making your own freezer burritos. I'm trying to avoid processed convenience food, which makes things difficult at times, but that sounds so easy and convenient.

I freeze everything! Pretty much any dish can be portioned and frozen. It saves me time and money because I'm not wasting food either and I'm saving on energy costs by cooking once and making 6-8 meals.

Could you post your zucchini salsa recipe pretty please!!?? I literally have pounds and pounds of zucchini from the garden and need healthy ideas other than roasting and stir fry concoctions. Thanks!

Sure, but I don't have a specific recipe with measurements, etc. It is basically "pico de gallo" (tomatoes, onions, jalapenos or any pepper you like, garlic, cilantro, lime/lemon juice and salt to taste) with about 1/2 zucchini in it. I put it all in food processor save for one tomato and a couple sliced zukes to put in a bit after pulsing since I like it a bit chunky. Admittedly, I think the zuke salsa will taste better with some sweet corn or something but that's just my opinion. I make my cucumber salsa the same way.
