Default Recipe to convert

Can someone look at this recipe and make suggestions if it could done as SB friendly:

Spinach & Artichoke Custard

10 eggs
2 cups Low Fat Cottage Cheese
2 cups Shredded Cheese
1/2 cup Parmesan Cheese
1/2 tsp salt
1/4 tsp Nutmeg
1 Pkg Frozen Artichoke Hearts (thawed and liquid squeezed out) or 1 can quartered artichoke hearts, drained.
1 Pkg 10 oz Frozen Chopped Spinach (thawed and drained)

In large bowl wisk eggs, cottage cheese, 1 c shredded cheese, parmesan cheese, 1/2 tsp sale and nutmeg until blended.
Coarsely chop artichoke hearts. With your hands, squeeze as much liquid as possible from spinach. Stir artichokes and spinach into egg mixture.
Spread mixture in a buttered shallow pan, 2-3 qt casserole. Sprinkle 1 cup shredded cheese on top.
Bake in 350 over until custard is firm to touch in center, 25-40 minutes. Let stand 10 minutes. Cut and serve.

201 cal - 54%(108) from fat, 18 gms, protein, 12 gms fat (6.1 sat fat), 203 mg Chol. 530 mg sodium.

It was very good, was at a pot luck, I would like to add chopped green beans to it and maybe more veggies. Would be great to freeze for fast breakfast. If it can be SB friendly.

I would make sure the shredded cheese is a reduced fat one to cut calories, but other than that, it looks fine. And by the way, thanks for the recipe; it sounds wonderful!

It sounds great! If you are going to use if for breakfast, you might try cutting back the parmesan to 1/3 cup, change the shredded cheese to lowfat as cottage suggested, and perhaps reduce it to 1 1/2 cups. That would increase the overall health profile, while not changing the flavor much at all! Looking forward to trying it!
