Default What are you eating for lunch/supper?

So, I was just feeling kind of lonely with my dieting today, and because I'm always interested in talking about food (I swear I've gotten more obsessed since I started having to limit it!) I thought I'd just post this general question.

What are you eating for lunch/supper today? If you plan I guess. I start planning as soon as I wake up, so that I can look forward to it.

Me:

I'll be having an Amy's Frozen Tortilla & Black Bean casserole for lunch, and then it will be a fancy chicken salad stuffed inside a whole grain pita for supper. Sooo looking forward to them both!

I'll have enough calories left for either some Goldfish snack crackers in the afternoon, or a small hot cocoa after dinner. Yum!

I eat almost the same thing for lunch every single day. You would think I would get tired of it, but I look forward to it every, single, day. I eat a chopped up large apple, sprinkle it with saigon cinnamon and then dip the slices in 3 tablespoons of jif.

For dinner I always have a lean meat and a green veggie - HUGE amount of veggies. Or, in summer, I might have a huge salad with either a lean meat or hard boiled eggs. Tonight it is salad with 2 eggs.

Maaaaaan, I look at pinterest and recipes practically NON-stop. It's a bit obsessive LOL......on a positive note it's usually healthy recipes that I'm looking up and wanting to try.

Today for lunch I had the other half of my subway sandwich from last night. Roast beef on whole wheat LOADED with veggies.

I love the Amy's frozen meals though, super YUM. Have you tried the cedar lane variety?? Chicken burrito is my absolute fave

I know what you mean about liking food. I love coming up with new recipes and trying stuff out and finding a balance between tasty and healthy. I don't get to talk to anyone about it, much. But people do come to me when they need delicious, healthy recipes! Lol!

I made sweet and savory lentils (OMG, they are good!), and I will eat them with some barley (love that stuff) and roasted carrots. It's one of my favorites right now.

I always use my leftovers from dinner for lunch the next day. So last night we had grilled chicken skewers, quinoa pilaf, and roasted asparagus - leftovers are in the fridge, waiting for my lunch hour.

Dinner tonight is going to be orange chicken and broccoli - chicken breast marinated in fresh orange juice, orange zest, soy, ginger, and garlic, stirfried with broccoli, over brown and wild rice with a sprinkle of chopped cilantro on top.

Lunch - Brown rice flakes with lentil curry (Indian yellow dal) and cooked bottlegourd veggies (I know, it may not sound too appetizing but this was SUCH a delicious meal..not to mention super low cal/carb...nom nomm).

Dinner - Tofu and bell pepper stirfry and then a dish of pesto zucchini-noodles (zucchini as noodles, I didn't actually eat any noodles..same concept as spaghetti squash)

I don't necessarily designate lunch and dinner. For today I still have these main items which I'll eat when I'm hungry. I usually eat twice in the evening because I'm the most hungry and I can't sleep if I don't. So I guess I have generally have 1 late lunch, a snack and two dinners.

Amy's bean and cheese burrito
2 eggs fried in butter with bell peppers and onion fried in olive olive
4 oz salmon and 2 cups of broccoli

Yesterday I made dinner for both me and my husband. We had chicken cooked in the crockpot and jasmine rice with a curry sauce.

Lunch was a cup of carrot/peanut soup.

Dinner will probably be scallops with peppers/scallions over grits with wilted spinach.

Lunch was non existant, lol, as I do IF.. so when I get home from work I'll have a big spinach salad with tomato, onion, celery, carrot, cucumber, yellow/orange/green peppers, great value light ranch and croutons.. then I'll make dinner and eat with DH when he gets home around 5:30. Were having jambalaya!!

I'm not sure about either at this point but last night I had whole wheat organic penne pasta, small about of chicken, and fat free cream of chicken and cream of mushroom soup tossed together with a pinch of garlic and pepper. I couldn't much but my partner really enjoyed it as well.

it was okay but disappointing: when i saw the chili pepper right on top, i had hope there would be heat but.... not so much.


i'm hoping the lemon pepper and the sundried tomato/basil are better.

For lunch, I'm having a chicken wrap with lots of veggies, a little cheese and a bit of ranch dressing with some of the roasted brussel sprouts/squash from last nights dinner. I'll admit..I'm having a 'pepsi next' (40 cals per 8 oz) :S lol but it is Zumba night....lots of water afterwards!

Lunch was a cup of curry lentil soup, dinner will be steamed artichokes with lemon and bay leaf, maybe some flounder, and a spinach salad. It's a warm day!

Lunch is leftover orange chicken, broccoli, and brown rice.

Dinner will be tostadas - crispy baked corn tortillas topped with black beans, extra lean ground beef, sauteed peppers, zucchini, and onion, olives, salsa, lettuce, and light sour cream.
