I found a great frozen seafood medley at Costco yesterday...shrimp, scallops, mussels and squid rings. The price was right and it looked perfect for cioppino. I intended to start from scratch today then it got busy and never happened.
I love Whole Foods organic pasta sauces because they
don't contain sugar and had the idea of using the sauce as my base. I searched and found a recipe which did just that;

I went even simpler. I poured the frozen seafood into the serving bowls for approximate portions. I heated a little olive oil in my pan and sauteed chopped onion and minced garlic. I added the pasta sauce, white wine, thyme, crushed red pepper and salt/pepper. When it came to a boil I added the seafood and simmered for 5 minutes. Meantime, I cooked a package of frozen brown rice in the microwave for 3 minutes. I served the stew over a small bit of rice and it was fantastic!
My start to finish was 15 minutes and it was truly gourmet! I've used the WF pasta sauces as a base before but this was the best yet.
