Default Facing My Veggies this a.m.

Hi all -- need a little pep talk here: I can't seem to face my veggies this morning! I had been using V-8 juice as my breakfast veggie, but bleh, it's giving me heartburn!! So here I am with my scrambleds, my bacon, and.....celery??? Yes, that's what I threw in my lunch bag, celery.

How many of you guys really eat veggies with your breakfast? Is it OK to skip that once in a while? I don't always have a breakfast meat, usually some HB eggs, or some scrambled with low-fat cheese. Without the meat, it's easier I think to have the veggie...

Thoughts on this? I eat PLENTY of veggies the rest of the day, so I know I will make it up...

I use canned diced tomatoes, or I sautee spinach and mushrooms to go into my eggs. Sometimes I dread trying to come up with what veggie I am going to eat, but for me, it makes a difference and gives me enough carbs to work out in the morning.

I have also been known to sautee zucchini or yellow squash and put it into my eggs. I usually don't have a meat with breakfast, though.

I don't know if it would be ok to skip this one or not...I am sure every once in a while is ok...but maybe someone who has been doing this a while is better suited to answer that question.

I drink my breakfast....in fact, I'm sipping right now. I think part of what is so great about SBD is that we're all different and we find different ways to make this food plan work for us.

I have a "green" smoothie every morning and it's been my routine for the past 3 years. My life is always hectic and it took the daily planning chore off my to do list.

Today my smoothie has ginger root, an apple (not P1), carrot, cucumber, kale and a piece of beet. After I blend that all I add a scoop of protein powder and a scoop of a green powder. For my body type I have enough protein to hold me through the morning and plenty of veggies.

Since I don't ever do a "traditional" breakfast I don't have any great suggestions for you....just the opportunity to tell you what works for me. I know that others will chime in.

I often make crockpot refried beans with lots of peppers then load up with high quality, no sugar added, salsa. They are actually good with a little frozen spinach or broccoli mixed in. I'm also a fan of spinach, broccoli, and summer squash omelets. It wasn't a habit I had but now it's just part of my routine.

I don't. The only time I get any in first thing is on days I have soup (the broccoli/cauliflower/cheese is yummy for breakfast) or on the very rare occasions I have an omelet. BUT, I do find them a good mid-morning snack. Today I sliced an orange pepper and brought in in the car to eat after my workout.

Personally, I don't think the timing matters if you are getting in plenty. My philosophy is we each have to find what works for us on this plan and adapt it so that we can make it a lifestyle, something we can stick with long-term.

I get my veggies in the morning with my eggs, I can't eat eggs without some veg in it, since I'm not a big egg lover, I find the veggies makes them taste a whole lot better. I like to add bell pepper, onion and zucchini to my scrambled eggs or omlette. Then about 1-2 hours later for a snack I'll have some hummus dip with cucumber, celery bell pepper slices.

I'm with Karen, unless I have soup, which I have a lot, or V8, I never have veggies w/ my breakfast. I eat oats a lot for breakfast and....ew. Not feeling the veggie combo there. I try to make up for it later although to be honest lately I haven't been doing a great job! lol

I love veggies but I have to admit, I've been a little burnt out on them lately!

Cyndi, your comment is the essence of success on SBD, for me, anyway. It's a continually changing process of creating new habits that become very routine. What worked for me when I started has evolved to something which I believe works for me long term.

This sounds really yummy: can you tell me exactly how to make this please? I have been trying to think of things to make big batches of, where I can portion out into take along containers for my week! I need EASY or I won't do it.

I am really working hard to think outside the box for breakfast ideas, and soups actually sounds very yummy! I can see that I am going to have to spend some time in the recipe section of this forum.

I REALLY like to sleep so breakfast has to be easy and waiting for me. It's enough effort to make coffee before I leave for work.

My solution is to bake a frittata every few days in the evening and cut it into wedges that warm up in a minute in the microwave. It's a great way to get veggies into breakfast and less work than standing over the stove.

Last night in an 8x8 pan sprayed with a little PAM (is PAM ok?), I tossed in a handful each of chopped up spinach, diced green onion, orange bell pepper, and reduced fat mexican blend cheese. Then I whisked up 7 eggs really good and poured over the veg/cheese. Bake at 375 for 30 minutes until set and a little golden on top. That pan gets me 4 generous size servings and warms up great in the morning.

You can change up the veggies and cheese so it doesn't get boring. Pretty much any combo works.

Mandy that sounds real good and easy.

I usually try to throw a veggie in at breakfast, this morning it was leftover spaghetti squash and the day before veggies slices.

I run into problems for afternoon snacks with I get home. That is when I feel I am likely to make a mistake.

Wow, there are some really awesome ideas here for breakfast!

I've been eating omelets with TONS of veggies in them for breakfast this past week (I don't love eggs), but I know I'll need to change it up as time goes by. The soup and beans sound great since you can add veggies to those as well. Thanks!
