Default Frozen spinach + chicken breast + ...??

So we've reached the end of the week...which means tomorrow for lunch, I'm going to have a wee bit of trouble whipping something up.

I have boneless lean chicken breasts. I have frozen spinach. I have cheese....rice...1 egg...cherry tomatoes and some lettuce....as well as multiple herbs and spices.

...Thats about it in terms of healthy food in our fridge (yes, we need to go grocery shopping )

Can anyone recommend a recipie that doesn't require to many ingrediants? Some sort of chicken/spinach bake?

You could do a chicken breast with spinach, cherry tomatoes and an egg on top. My italian grandmother used to fix that for lunch for us a LOT. It's good too.

She used seasonings, and baked them all together. So good. I bet a little cheese on top would be good too.

you can pound out the chicken breats, add spinach and cheese (I use ricotta) and roll them. YUMMY.

I immediately think spinach and cheese stuffed chicken breasts or flattened and rolled with a tomato salad.

Yep, thaw them, buterfly them and then pound them out so they're pretty flat.

You can use this recipe from skinnytaste as a guideline for cooking. 25-30 minutes at 450.

Thaw the spinach too or they wont roll very well.

Thanks guys! I wound up mixing together chopped up chicken breast with spinach and edamame...doesn't look half bad considering I did it while half asleep this morning!
