Default muffins, muffins, everywhere!!

So I am on day 4 of my phase 1 restart and I NEED A MUFFIN!! Every where I looked someone at work was eating one and I wanted some carb loaded sugar treat sooo bad today!!

I did good, i did not jump over the cubicle wall and attack any carbs! Instead I printed out the recipe for black bean brownies and they are in the oven now.

Please please let them be good!

I'm not sure where you are but if you have a Job Lot nearby they often carry Bob's Red Mill brand which are reasonable priced. You only use 3T per muffin so one bag lasts a long time.

my black bean brownies did not turn out well so I might try this muffin soon. Would it be good with SF jam? I am addicted to apricot!

I would avoid SF jam on phase one.

sf jam is allowed on phase 1. I've never understood that but it is allowed and I know several successful Beachers here who did have that in P1.

OK, so what is the change out for white bean brownies? I always have black bean brownies in my freezer, they are my favorite thing. (I add banana and some ground oatmeal to mine)

But I would try the white bean. Do you use northern beans in them?

Chickadeee, I don't think there's any big difference between the white/black bean brownies. I just started using the white beans since I have lots of them and I've never gone back.

the edges of my brownies did not taste good at all, maybe they were dry? the inside wasnt as bad though so i didnt toss it...

in the SBD supercharged book it list SF jam as a "sweet treat" so its ok but no too much.
