Default Baking...ugh!

I love to bake and for Christmas my mom got me the 101-Piece Wilton Decorating set. Something I've been eyeing for awhile but with a $150+ price tag I couldn't ever afford. I love it and am extremely grateful.

So today's her birthday and she asked if I could make her cake with my spiffy new set, So I agreed, I made a homemade red velvet cake with cream cheese frosting.
My problem is that when I'm baking (esp. when make my batter and frosting) I have to try everything multiple times until its just right. I probably wound up eating a cupcakes worth of frosting, and now I feel guilty and gross from all the sugar and cream cheese!
When I was trying the frosting it was really a conscious decision, it was something I do all the time and I'm not sure how to fix it....

Does anyone else know what I'm talking about? or how to stop feeling all icky from all the fat/sugar?? ughh.

Well for starters its not like your going to be baking her a cake from scratch everyday.... so today you had quite a few more calories then you were supposed plus the sugar ... so you did... move on you cant turn back the time... just work out a little more tomorrow or tonight.

Or you could just let someone else be the taste tester when your baking?? maybe invite a friend over to help! then you dont have to taste at all... trust me i love to bake and cook and i used to taste test everything as well... now i dont touch it AT ALL!! I let someone else taste it or I just make it and hope it tastes fine... i always my guests for feedback so if it tastes like crap theyre going to tell me

As for how you feel right now about eating the sugar?? well for me the only way to get rid of that feeling is to do something positive like workout for an hr or so and eat really healthy for the rest of the day!

I feel you! I LOVE baking and get many requests for my cupcakes and cookies all the time. Its even what I want to do, I want to go to school for pastry. I've always felt really guilty too because I also taste as I bake. I wouldn't know how to break that though. I just like to keep in mind that I'm not baking everyday.

What's your plan?

If you're calorie-counting then just figure out an amount of calories and factor it in. I LOVE baking and I made cookies, cakes and things during my weight loss and I would factor that into my calorie count. Don't feel bad about it at all! It's just one day!

I had the exact same thing yesterday. It was my dad's birthday, and I am the family baker. I made him this rich Black Forest cake with the whole lot - chocolate cake, cherry cream filling, chocolate ganache... and melted chocolate shards decorating the sides. AND we have guest with children today, which meant that I also was making a banana bread and a batch of cupcakes.

After being so good at Christmas, I had my finger in everything. It was terrible. I couldn't even work out how to measure how bad I had done calorie wise because all I was doing with picking constantly throughout the day.

Upside though, I did go for a 45 min run, and (even though this is terrible), I didn't have any lunch had a small dinner of a small steak and salad (skipped all of the potatoes and tother delicious birthday dinner bits) and drank 3L of water.

Today, I have the worst headache (I'm guessing from all of the sugar), and the very thought of chocolate is making my stomach spin.

I way I see it, I'm not baking every day. I am not going to give up baking because I love to do it. So, I am not going to stop baking while I'm losing weight because I'm trying to establish habits now that I can continue during maintenance. And now I have a memory of how yuck I can feel after indulging myself all day. That butter, sugar and chocolate tasted nice the first time, the third time not so much.

It's a process. I'm hoping that every time I go through this, I'm picking less and I'm feeling less deprived and more strong in my resolve. I have a month until my mum's birthday. Fingers crossed I do better then! =)

Im a baker too and o.m.g. Is this a huge problem of mine. Worse, I hold water from eating sugar, so making a cake and sampling batter and frosting (about the amount you mentioned above) will mean a 3-4 pound weight gain for a few days on the scale. I am still trying to come down from all the Christmas baking. 4 down and 10 to go. Yep... I gained 14.8 pounds in 17 days. Did I mention tomorrow is my husband,s birthday and orthodox Christmas, so I'll be baking again tonight? Ugh..... My love for baking is diminishing rapidly.... I'm a bread baker too which at least is not something you can sample as you make it!

I am not a baker, but as far as to help myself feel better after eating too much sugar, I drink a bottle or two of water. It's probably a mental thing, but it just helps me not feel so...sugar hungover? Not sure how to describe it. Like everyone else said, it's only one day You can definitely get back on track tomorrow!

smaller spoons! Have you ever seen those little shovel looking spoons they serve with gelato? Like these ones

You can still taste-test but with little spoons, the amount per serving is going to be WAY less. I suppose you could also try it with a baby spoon as well.

I also find that it helps to make notes in cookbooks. Like "increase vanilla from 1/4teaspoon to 1/2 teaspoon". That way, I remember the "perfect" amount from the last time I taste-tested something and I have fewer pinches and dashes to get to perfect.

Pastry cook xD So I bake professionally xD and I'm always trying things multiple times before I'm satisfied with it because I kind of have to...The only thing I can suggest is when that happens, just make room in your daily calories for it

Like everyone said, it was just one day. Trying for perfection while dieting will lead to disappointment. You need to understand that its impossible to reach, and you will slip and its OK.

Btw...i'm really craving cake now xDDD grrrrr

i feel the pain.. i just made Brazilian cheese puffs today and ate a third of the batch :-/ In a way, it's not a bad thing perse since that just means i'm a good baker, right?? haha

I should have added this to my other post, but I have a suggestion for all of you bakers out there. The majority of you probably really just bake for special occasions, right? Well try to focus on how everyone else enjoys the treats you make vs actually eating it yourself. I know this doesn't really help with tasting, but I'm sure it's tempting to sample once it's finished!

I bake this cake that everyone in my family goes nuts for and I came up with it because I wanted it originally. During my weight loss I did eat it once but I actually just can't stomach it anymore (I can't really stomach many sweets anymore at all).

This cake is probably packed with calories, but here it is: Chocolate cake, peanut butter in the middle, chocolate frosting and peanut butter cups smashed up all over the top. I'm pretty anal about how the peanut butter cups are placed over it and I don't do it randomly and I have fun decorating it. The newest variation (my Dad loves this one) is snickers bars on top.

It tastes AMAZING but I don't eat it anymore. Instead I just really love to see how other people are enjoying it it makes me feel great to see that so many people go nuts for this cake! I made it yesterday for my Uncle's birthday and he was totally surprised and couldn't stop thanking me! THAT was enough--I didn't really need to have any of it.

I did have a small brownie though, but I paid for it later
