Default Spent ALL DAY cooking...

SO, my husband and I are starting to plan out our meals a week in advance. I spent the ENTIRE day preparing meals for the week. I work in the city and have to bus in, and my husband travels an hour-2 hours each way to his work depending on traffic. So, it is difficult to cook at night, as I don't get home much earlier than 7 or 7:30. Do you guys have any tips for me?! My Sunday wasn't the lease bit relaxing. I know it will be worth it during the week when my meals are all prepared each day. Do you all plan out your meals??

If I plan meals or cook ahead more than maybe 2 meals at a time something always comes up and food goes to waste. I wish I could just cook on Sunday and be done for the week. The closest I can come to it is making a pot of soup or something I can freeze if it looks like we can't finish it in time.

Ya, that used to be my problem, but then I gave up all of my credit cards to my husband, and CAN'T allow anything else to pop up. I labeled every signle meal in their own little Tupperware container... I'm a control freak. But I'm EXHAUSTED! I don't think there is any other way, though.

I've found that the SB Quick and Easy cookbook is true to its word, and tasty. The DH and I plan out our dinners for the week, go shopping, and then the recipes in that book can be cooked within 30 minutes, including prep time. Since the recipes make four servings, and it's just the two of us, that means there are leftovers for either the next day's lunch or dinner.

I plan my meals. I find cooking relaxing, though. I made chicken enchiladas and froze some. I made a pot of rice and split it between a few tuppies. I boiled a couple of beets and chopped it up, and steamed some collards and boiled some eggs. And I have some poached, torn up chicken in the fridge.

This way I can throw things together for each meal without too much effort and without resorting to stopping at the store.

I used to do the same thing. Spend all day cooking and not enjoying Sunday at all. Now I cook two meals at a time. Monday I will cook supper and something for Tuesday and make a little more so I can have extra for lunches.
