Although I am not choosing the low carb lifestyle, the only advice I can give is to choose a specific program, like Atkins or South Beach ( I realize southbeach may not be 'true' low carb, but again, I'm not that saavy to low carb options). Learn about a specific program, read the book or whatever. Don't try to wing it just by eliminating random carbs.
There are groups and threads for almost every WOE imaginable. Ask questions- everyone here is a great help.
