Atkin's Diet

  • Does this Low Carb/Atkin's Diet really work? I was reading about his books and it looks interesting (and appealing to me) because I dont like veggies.
  • Derek - I was going to ask you over at the Fitness Scams thread...about the veggie thing...where you said you COULDN'T eat veggies. Is it because of a medical reason or you just don't care for them?

    I'm not a big veggie fan myself - and I don't do Atkins - I'm far from an Atkins expert - but I'm pretty sure that the plan DOES include veggies - it's not just steak and butter.

    Laying it on the line here - if you want to lose body fat, and keep it off - you NEED those veggies. The fiber, betacarotene, and good stuff in veggies can't be found anywhere else, and that includes vitamins and supplements.

    If you have problems digesting vegetables, I highly recommend that you talk to your doctor. If you just don't care for the taste - experiment with ways to prepare them - such as homemade (NOT CANNED) veggie soups...stir fries with brown rice...salads...

  • Something else to remember is low-carb doesn't work for everyone. I personally gained weight following low-carb, and need low-fat. Jennifer, however, needs low-carb because she is insulin resistent, and her physician recommended low-carb.

    Eating your vegetables doesn't have to mean sitting down to a plate of green beans and corn. You'd be surprised how many ways you can get veggies into your diet, and love it.     Good veggie ideas:

    Saute peppers and onions till done, mix with a little leftover grilled chicken and seasonings, put in a nonfat flour tortilla with salsa (salsa is a veggie!) and nonfat sour cream. Delicious fajitas!

    Just today, I made sandwiches for my son and myself for lunch. I took part of a loaf of french bread, sliced in half lengthwise and scooped out some of the center. I filled it with a small amount of black olives, a lot of sauteed mushrooms, roasted red bell peppers, thin sliced onions, a clove of minced garlic, and some finely diced tomatoes. I sprinkled it with fresh cracked black pepper and basil, and fresh spinach leaves. I shredded just a little fresh parmesan cheese over the filling, sprinkled it with balsamic vinegar, then wrapped it in foil and baked till hot throughout. It was delicious!
  • Spaghetti sauce also counts as a veggie, and you can also put extra lettuce on your sandwiches (romaine is healthier/more nutritious than iceburg) and put in little veggie extras with a more mild taste, such as bean sprouts.
    Pumpkin is also a vegetable, and there are many low fat and low calorie pumpkin pie type desserts out there as well. It is high in vitamin A, just like carrots.
    Like Suzanne said, if you like tacos or fajitas-use a small amount of chicken or beef, and load up on the salsa, lettuce, grenn peppers, onions, or tomatoes and you will have a full veggie serving in each taco!
    The Atkins plan and Protein Power plans actually have a lot of vegetables in them once you get past the initial couple of weeks. Since you are low carbing, most of your carbs and fiber rich foods you are allowed to eat ARE vegetables-fruits are pretty limited to a few certain types, and in very small amounts. On Atkins, you are only on the meat/cheese deal for the first 2 weeks.
    I am pretty picky about veggies myself, I love them, but in certain ways. I do not like raw tomatoes, but I love tomato sauce. I do not like raw broccoli AT ALL...but I love it cooked with or without any sauce. Green beans. peas, and corn I much prefer frozen over canned-you just really have to try all that there is out there-and in all the ways it is available.
