Default Electric skillet cooking ideas needed

Ok, so vacation #2 is about to commense. Another trip with lots of travel and lots of potential for eating out. Unlike my last trip where I was by myself and ate what I wanted whenever I needed, (and lost 3lbs), this one will have hubby and son. Hubby goes bonkers without his 3 squares plus snacks.

This year we are vacationing a bit different than usual (we usually have a few weeks in our camper, so I can cook most meals). This year we are hoteling it. We will have our cooler and most our rooms have fridge/microwave in them. They do not have stoves. And the place we are staying the longest has rules against grills or stoves in the room or on the premisis. So we aren't bringing our little grill. (although I told hubby we could go to the park and cook)

I planned to bring an electric skillet because I can do alot with that (veggie/meat stirfry, etc). But could use some creative ideas for one pot healthy cooking.

Wow! You are seriously dedicated. I would have to just get a calorie counter book and eat out/grocery shop for things that don't need to be cooked.
I would get discouraged if I had to cook on vacation. However, I wish I had recipes for you, but I don't.
