Firstly, I wouldn't worry about the scale. If you can't take it with you, then it probably won't be too difficult to find an inexpensive new one once you get to school. I actually don't have a scale at home, so the only way I can weigh myself between WW meetings is at the gym, which is a pretty nice incentive.
I'm a graduate student, and the thing that keeps me on track is that I know no matter how stressful things are, I'm always going to have to eat, and most of the time it's just as easy to eat something healthy as it is to eat crap. So, try to make choosing the healthier options part of your routine. And don't beat yourself up if you're not always perfect. I normally try to eat a lot of whole foods, fresh vegetables, etc., but when things get bad I realize it's not the end of the world if I go for a couple of days consuming nothing but coffee and Lean Cuisine.
And don't be afraid to try new things and ask questions. Chances are, the dining hall will be able to provide you with nutritional information for what they serve, or at least recipes so you can figure out the calories yourself. And those vegan options might not be so bad!
