Default Aiesline's 30 minute meals for 4-6- Shrimp Taco's

Been told I should share this one so here it is.



Ingredient

2 pounds of shrimp (raw shelled and de-veined)
1 10 count package of Low Carb High Fiber tortillas (I use the ones by La Tortilla Factory they have 50 calories each and don't taste like cardboard)
1 green bell pepper cut into strips
1 small onion cut into strips
tomato
fresh salsa (normally in the produce section)
Fat Free cheddar cheese
Fat Free Sour Cream
1 cup parboiled brown rice
Non stick canola oil spray
taco seasoning (I make my own so there is no flour or corn starch. If you buy you will prolly need 2 packages)
salt (I use kosher cause that's what I like)

First things first start your rice on to cook following package directions.
Heat a skillet over medium high heat with a little of the canola oil spray and saute peppers and onions till browned and tender. Set aside and cover with foil to keep hot.

Your rice should be just about done. Add about 2 teaspoons of taco seasoning and 3 heaping tablespoons of salsa mix and cover.

spray the same skillet you used for the veggies with a bit more spray and reduce heat to medium. Coat your shrimp in taco seasoning and saute till done.

Warm your tortillas in the microwave between sheets of papertowels if desired.

Assemble the yumminess and devour.

Each taco should have between 175-200 calories depending on how heavy handed you are on the rice cheese and sour cream.

They are. Nothing quite like a fast cooked meal that everyone will eat. There is also the bonus that guests have never figured out it's diet

I start with this recipe and add the following

garlic salt
dehydrated minced onion
oregano
garlic power
and extra cumin
and red chili flakes


I don't have exact measures I'm afraid I make it till it "looks and smells right" sorry
If you must add a thickener I'd use arrowroot flour. I've never needed it.
