I usually buy Hillshire Farms thinly sliced. I don't know what's in the deli counter meats and I know the fat content isn't as low so, that' what I use. BUt be careful of all the salts!

Oscar Mayer Deli Fresh used to have the SB seal right on the package. As long as you get ones with no sugar added - don't buy honey ham & stick with lean cuts. I love their Mesquite Smoked Turkey Breast & lean Roast Beef

Boar's Head makes a number of low sodium products, and even their roast beef is very low fat. I feel like it's a bit less processed than the meat you buy already packaged, but honestly I don't have any facts to back that up, so maybe I've just been brainwashed by Boar's Head.
