Boy are these things good! I made them for the family this morning for breakfast with some ham steaks and scrambled eggs. I've never had them before and I am impressed. The kind I made called for 1/4 c flax seed meal, 1/2 tsp baking powder, a Splenda packet, and some cinnamon -- mixed in a coffee mug along with an egg and a little butter. Then you just microwave it for 1 minute, and suddenly there is this amazing bread-like substance that can be sliced into rounds, toasted, spread with cream cheese, etc...
Amazing.
I wonder if there are some versions of this that don't need sweetener or cinnamon, that would be more like a "regular" bread than a sweetish one?
There's no reason you couldn't make it without the Splenda/cinnamon, and with some savory spices if you wanted. Throw in a little onion powder, maybe, or some dry mustard, and see what happens.
I agree that the one minute muffin is fantastic. And half of one is even Induction-friendly. Always a plus in my book! For post-induction, Linda's got a peanut butter version on her website that sounds yummy. I haven't tried it yet, obviously, but someday!
Well only b/c in the book he says 2 Tbsp flax meal max during Induction, and a whole one has 4. It's probably not going to hurt you, though, if you're within your carb limit for the day.
OK...so for the 8 net carbs (of the flax meal)....you get one muffin or do you get more than one? If one....half of it would have 4 net carbs, right? You know, I remember seeing flax seed at this food co-op that I get stuff for my dad at. And seem to remember checking for the number of carbs and then ruling it out as having too many...well enough that it would cut down on the number of remaining carbs for the day....enough to make me think it wasn't worth it for me. But 4 grams does not seem all that high for a half, I'm thinking.
One thing though....I've noticed that I strictly stick with a certain list of foods daily. I have this fear that veering off it in any way will then kick in cravings for bread, etc....and risk me veering even more. I feel this sense of control when I stick to the list.....and never have to worry about even thinking about those other foods.....and it's like I don't want to rock the boat....don't want to even go there. I remember it causing problems during my 12 years on maintenance and I totally stopped stepping even one toe off the road....and felt safer that way. The only reason I did not run into major problems was due to my 5 lb. rule but I definitely noticed problems when I'd try any sort of low-carb versions of things that are not allowed.
And honestly...it's not even disordered eating type thinking. I eat very, very healthy....just don't veer from the Atkins Induction list with the exception of a relatively small amount of almonds. But...it is a tad bit rigid (my thinking) I realize....though when I think of the benefits I get from being a bit obsessive, it seems totally worth it.
Microwave 1 minute (or more). Take out. slice, butter, eat.
Cream cheese would go nicely, too.
Notes: 11.1 total carbs, 8.8 fiber, for 2.3 net carbs.
The shape of this can be changed by making it in a bowl.
It can be "toasted" once it's cooked.
The cinnamon can be replaced. I would imagine that any sugar free syrup could be added.

I think I heard about it over at LCF and googled the recipe. For half a muffin you'd be at just over 1 net carb, according to the creator of the recipe.
The flax meal makes it feel very much like a bread product, which made me feel like I was cheating on my diet. I am trying not to rely on flax meal for that very reason; the carb count is fairly high, and I could easily find myself going for flax meal recipes far too often. I think it's best if I stick to the basics for now myself.
Having said that, one of these days I will try toasting some croutons made of the one minute muffin and see how they do. It would be a nice addition to salads from time to time.

Many people like savory MIMs made w/o sweetener/cinnamon with things like grated parmesan, garlic powder, dill, basil, oregano or whatever herbs/spices you may like. Depending upon your tastes add a small pinch of salt. Some people also like a plain MIM with no seasonings.
Also, there is a difference in flavor whether you use golden flaxmeal or regular brown flaxmeal.
I have made these on the savory side and in a square bread shaped container. I slice the resulting "muffin" in half into two slices of bread...toast them and I have made bacon/tomato/mayo sandwiches. YUM!

Try the organic/health food section of your grocery store. If they carry Bob's Red Mill products you will find it there.
or ... check out your bulk food section for flax seed & grind it at home - just be sure to refrigerate what you don't use (& use ground leftovers soon) b/c flax seed goes rancid quickly once ground ..
