I have really been fighting myself not to make any 7-layer dip. That stuff is soo good, but it is EVIL!

So, I found something good, and I thought I'd share just in case anyone else is being hounded by cravings for mexican. I bought some crunchy tostadas (53 cals each), topped them each with 1/4 cup fat-free refried beans with some taco seasoning mixed in, then with 1/2 tablespoon of taco sauce on each one, then 1/8 cup (14 grams) of 2% sharp shredded cheddar. You can either mix the beans with the taco seasoning and let that get cold (to eat them cold and make them more like dip or taco salad), or you can melt them in the oven on about 350. So delicious!
ETA: two of these were 326 cals! Not a bad lunch!
