Exclamation Curb your craving for Mexican here!!

I have really been fighting myself not to make any 7-layer dip. That stuff is soo good, but it is EVIL! So, I found something good, and I thought I'd share just in case anyone else is being hounded by cravings for mexican. I bought some crunchy tostadas (53 cals each), topped them each with 1/4 cup fat-free refried beans with some taco seasoning mixed in, then with 1/2 tablespoon of taco sauce on each one, then 1/8 cup (14 grams) of 2% sharp shredded cheddar. You can either mix the beans with the taco seasoning and let that get cold (to eat them cold and make them more like dip or taco salad), or you can melt them in the oven on about 350. So delicious!

ETA: two of these were 326 cals! Not a bad lunch!

I'm glad tonight is taco night for me, because now you've got me craving Mexican. I've got the meat cooking in the crock pot (chicken, black beans, onions, homemade taco seasoning)... ready to be made into tacos with lots of lettuce and salsa and a little cheese... yum!

Love refried beans! I will try this i usually eat then wrapped in a tortilla or like a dip w/nacho chips! I like to add some hot sauce on top...delish. (ok,im buying some tomorrow)

So I made your Mexican idea for dinner tonight... and wow, was it good! I put some ground turkey on top of the refried beans (for stickiness) and then topped with Tapatio and cheese. I had 2 tostadas and they were so filling! I doubt I will want to munch later on tonight. Thanks for the idea allicat22.

You are welcome! What I love about it, is that I get out TWO tostadas, and don't keep digging into a bag of chips. That's all there is, so it worked for me! I am really wanting some more tonight! I am also going to have to try that cheesy enchilada recipe. Sounds so good!
