So my husband has been doing SO well recently. Nearly two weeks of working out and counting calories, and he's already gone from 276 to 268. He's starting to hurt a little on the no or small dessert thing after dinner, and it might crack him....
Tonight we're having grilled chicken and veggies for supper, and he'll have around 250 calories leftover to burn. Are there any desserts y'all have made that have satisfied that sweet tooth but aren't HORRIBLY bad? He's not really big on the fruit yet...took me a while to come around to that, too....
I like angel food cake, berries and sugar-free cream. I make it heavy on the berries. I make mine beautifully in a trifle. It just seems to make the experience more decadent.
Oooh..just saw the fruit thing.
What about the no-pudge brownies?

I'm all for fruit...might make the angel food trifle once and see if he eats any. I bet he will....
I also thought about something simple, like angel food cake with sugar-free Jello or, heated cake with no sugar added/sugar free chocolate ice cream...
Be careful though... it might be dangerous for you to have them hanging around! It's just too easy to start down that slippery slope (brownies are a trigger food for me).
If you don't object to artificial sweeteners, how about SF jello and/or pudding?
In the longer run, I think it would be terrific if he could learn to embrace fruit desserts. It's apple season, and a baked apple or apple crisp can be easy, nutritious, relatively low cal, and delish!

I know you said he is not big on fruit. BUT.....
Does he like apple pie? Don't know too many husbands who don't. If he does, why don't you get several apples, core the inside of them with a inch or so hole throughout, put them into a glass dish in microwave sprayed with pam, then fill the holes with raisins and cinnamon, you can add a bit of any sweetener, like brown sugar, agave, or the fake kind into the hole too. (FYI, I do not use any sweeters, being the apples are sweet enough, but being he has the calories, go for it!) Nuke in microwave until done. Being it's fall, this is a good and filling fall time dessert. My husband actually asks me to make these often and I do. Oh yeah, I am not a fan of apple pie, but I sure enjoy this! Your house will smell awesome too

i'm a big fan of the 140-calorie ice cream treats...weight watchers and skinny cow both do nice things. i'm particularly partial to the mint chocolate sandwiches and the chocolate cones. YUM. i have one just about every night!
My favorite desert at the moment is sugar-free chocolate pudding (60 calories) and Nabisco Honey Maid Low Fat Honey Graham Crackers ( 60 calories a sheet). I like to just dip the crackers into the pudding but have spread the pudding on the cracker to make it look big. It tastes like chocolate pie. You could top it with light Cool Whip and keep it under 200 calories.
I know you said he wasn't big into fruit...anyway - I've been doing this the past week, melting a couple of pieces of dark chocolate and mixing with sliced strawberries and it helps when I want something sweet. You can probably do raspberries or even bananas, maybe having the fruit chocolate coated will hide it's a healthy treat.
I'm a huge fan of dessert and I must have a little sweet treat after dinner as well! you'd be surprised how low calories things can be if you practice portion control! some easy things that don't' require cooking would be like 100 calorie packs of cookies or even they make 100 calories packs of hostess cup cakes. etc.. skinny cow and weight watchers do make some fabulous ice cream treats! there is also rice crispie treats which are only 90 cals per treat!
also why not let him one single cup cake? they range from 150-270 cals.. home made and with frosting! or one small slice of cake. or even 2 or 3 fresh home made cookies? you can make a very small batch by cutting a recipe in half and pre portion them in to glad lock bags... so he can have one or two each night for a few nights...
I found the great thing about calorie counting is nothing is out of bounds.. if you eat 95% healthy during the day and your day has consisted of healthy nutritious foods. I say take the other 5% and allow your self a tiny treat.. for some people like me It's helps me NOT to binge because I don't' feel I'm depriving myself. Others it could trigger them into gorging on these foods. it just depends on the person. good luck with the hubster!

That's what I do and it's ridiculously satisfying! I use any fruit I have and melt some dark chocolate on it, usually I don't ingest more than 60-80 calories of this.
On a side note, I know you said that he's not turned on to the fruit for dessert idea but... well that's tough luck I say. Just do it everyday and don't think about it. Just give it to him like it's medicine and sooner or later he'll adjust to it. I think it's very dangerous to start making desserts with artificial sweeteners, it definitely worsesns your sweet tooth and all those chemicals are not good for you. I didn't used to like fruit for dessert either because it was too tart for me. Once I weined myself off my 2-decade sugar rush I realized that not everything has to be sugary sweet. Now my berries and chocolate taste super sweet because my taste buds have finally adjusted. You know it's the right way, don't take the short cuts and introduce fat-free sugar-free chemicals in your diet.
I ended up with angel food cake and no-sugar-added chocolate ice cream...he was definitely a fan! The next day I made some baked apples....I LOVED them, but he thought it was pretty gross and had his brother bring him a Snicker bar. He's a goofball....but he DID stay within his calorie range for the day, somehow...
