You can get all that info from a calorie list but first you need to know, what kind of cheese, what kind of meat, what vegies ? Your question is too vague.

NO cheese or meats.

So then what kind of veggies? About how much of each kind of veggie?

The mustard is easy around 5 calories if it was a standard serving.
The flat bread varies on how big it was and many other different things. My flat bread is 140 calories each, but again thats just one kind of flat bread.

It will make a difference raw vs roasted (with oil) veggies, or if the veggies are starchy. The biggest variable might be the flatbread.

they use the flatbread for pizza at the deli and it says it is 295 for half a pizza but that has feta cheese and mozzarella, i had mustard, peppercinis(1/2 a cup), tomato(2 slices), lettuce(1leaf), onions (about 6 rings), pickels(6 slices). but mainly i just want to know the flatbread, i am thinking it isnt much if it is only 295 for half that has two different kinds of cheese... i hope lol....

Well even if you counted it as is with those two cheeses 150 isnt bad. I would personally count it as 150, over estimation yes but it would be safer. Take a few off for the cheeses and maybe figure 125 for the flat bread. Pickles if they were regular dill figure about 10 calories. Tomatoes 5-10 calories depending on the thickness. 3 for the lettuce. Maybe about 18-20 for the Pepperoncinis, calorie king says thats about the amount for 3 hole, I think that would make about a half cup sliced.
