Granted, I have trouble seeing some of the things they ate (such as apple juice, which sends me nearly into a diabetic coma ) as low-GI, but I think the information is still very sound.
Yep, makes sense. But canned peaches??? OMG. If I ate canned peaches for breakfast I'd be a raving lunatic bowling people over to get to the snack machine!
But I think the key there was fruit WITH cottage cheese. If I just had fruit for breakfast, I'd be a goner. But I found that if I have it with a lot of protein, like FF cottage cheese, I'm okay.
I just can't "do" cottage cheese...uh, uh, no way (unless it's in lasagna!)
It's just too "curdy" for me. I love feta though...weird.
Same thing with Creole Cream Cheese...I just can't stomach it, but adore yogurt. I bring my Mom Creole Cream Cheese every time I go to visit her since she landed in NC and she just can't get enough of it. yuk. On our visit in June, She told me "You haven't tried it since you were a little girl. Just take one bite". I took the bite and told her "there's a reason I haven't tried it in over 50 years...it's gross!"
Liver, beets, cilantro, cottage cheese and Creole cream cheese. I'd rather eat dirt!
Cat, I can't relate to disliking cottage cheese, but I hate eggs and seafood, two things most people adore, so I know that feeling.
Anyways, I guess the idea is the same--peaches and a hard boiled egg, or peaches and a slice of low fat cheese--the idea is to have protein with it to reduce the effect on your blood sugar.
But I think you're right, too, Ruth. The GL is the big issue. Though, for me, even a tsp of apple juice knocks me over. No idea why...maple syrup has a higher GI than apple juice, but it doesn't hit me at all. Our bodies are weird! (or maybe it's just mine...)
My standard breakfast during my vegetarian days was ricotta cheese with light fruit cocktail, or peaches canned in light syrup! I had no idea it was good for you. I always felt guilty, but it was the quickest breakfast I could think of. I may try it again when I get to Phase 2. (Using berries, of course )
Fat free cottage cheese with fruit is a great breakfast in P2, as long as you are able to tolerate it without cravings. My Phase 1 standard breakfast is FF cottage cheese with grape tomatoes. Yummy!
