Sometimes it takes some time before people notice a thread; and/or they may not know what to suggest -- BUT, here's a few ideas :
You can cook some meat ahead as that can keep for 5 days in the fridge and I often put pre-cooked meat in servings in the freezer too, ie leftover beef steak or lean hamburger, chicken breasts or pieces, and put them into containers.
You can make a bunch of rice and pasta and even potatoes ahead; and I often fill a roaster with new, whole, small potatoes and all kinds of veggies like carrots, onions, celery, turnip or parsnips, long green and/or yellow beans, broccoli & cauliflower, etc ... all these well keep in your fridge for 5 days or put some in serving containers in your freezer. Take them out in the morning and by the time you get home they will be ready to heat up in a saute pan with some of the cooked meat, rice or pasta ... so easy!
You can make up a romaine lettuce or coleslaw salad at the beginning of the week; put in plastic containers and yes, it will be nice up to five days later or more (especially coleslaw). Here's some items to add: red onion rings, broken up romaine lettuce, red or green shredded cabbage, sweet pepper slices, celery slices, diced carrots, etc. Get ROMA Italian Tomatoes and keep these in the fridge as they last longer and don't turn mushy like other tomatoes do.
Prepare ahead about 5 salads in sealed containers and later, just add low-fat dressing and some of that PRE-COOKED Meat you also prepared ahead and you have a nice dinner. Also, you could add some cheddar cheese or canned cooked beans (well rinsed) to those salads too.
You know a nice homemade Chicken or Beef Stew, OR Chili can be made on Sunday night in a crockpot or in the oven or stovetop and put in containers in the freezer or fridge (up to 5 days) as well.
