Default how do you log deep fried foods?

How do you log deep fried foods that you make at home in a deep fryer? I seems like it would be difficult to log the amount of oil in each serving.

Let's say you started out with 3 cups of oil and after finishing you end up with 2 1/2 then you would take that 1/2 cup calories and divide by the number of servings you have. Does that sound right?

I would just look up fried chicken (or whatever it was) with a calorie counter online and use that value. Probably you drain the food after deep frying? So you can't really just subtract the oil.
