Default Great, Low-Cal Mini-Meals

Just wanted to share a little quick breakfast find I tried this morning...

1/2 cup Egg Beaters
1 wedge light Laughing Cow cheese
1 tablespoon chopped onions
salt and pepper to taste

I put all this in a coffee mug and zapped it for 45 seconds. Took it out and stirred it and then zapped it for another 45 seconds. It was absolutely fantastic!!! The total calorie count for my "cup-o-eggs" was about 100 cals. It was quick and easy and all in one cup.

Anyone else have a simple low-cal meal they'd like to share? Breakfast, lunch, dinner or snack...it doesn't matter. I'm always looking to add to my go-to mini-meals. Got to keep things interesting.

I like:

4 boiled egg whites
1-2 Tbs. of Miracle Whip fat-free
Celery Sticks

I make an egg salad out of first two ingredients and then dip the celery sticks into the egg salad. YUM and under 100 calories!

Also wanted to add--I buy the package of shredded carrots from produce dept. and mix in the fat-free Miracle Whip and a diced apple. The entire bag with the Miracle Whip and apple is under 200 calories and there is absolutely NO WAY to eat it all! If you have room for more calories, almonds and/or raisins topping this is awesome.

Default More of My Favorites

Okay, has anyone seen these X-Treme Tortilla's made by La Banderita? They have 12 grams of fiber and 72 cals each. I can usually find them at Wal-mart and Kroger. I love these things! You can wrap up practically anything in them and have a low cal snack. One of my favorite things to put in them now is 1 wedge of lite laughing cow cheese and a slice of 2% pepper jack cheese and zap for 30 seconds or so. That's about 137 cals. Not bad.

I also like to take about 8 strawberries and add a low-cal yogurt to them for about 100 cals.

A piece of 40 cal bread and a FF hot dog with mustard is under 100 cals.

A Kahiki egg roll (veg is just 70 cals) with hot mustard is a great snack.

I've noticed that lately I really don't eat a meal, it's more like a lot of mini-meals throughout the day. I still write each and every calorie down...that's the only thing that's kept the weight off ....guess I'll have to do that the rest of my life.

Cucumber/tomato salad:

1 large cucumber (34 cal)
Half a large tomato (19 cal)
1/4 or less of an onion- any kind you like, brown, white, purple (est. 10 cal)
Lemon Juice (0 cal)
Salt to taste (0 cal)
Sumac- as much or as little as you want I usually throw in a dash (a spice found at middle eastern grocery stores) (0 cal)

So for less than 65 calories it's an extremely filling salad and SO GOOD.

The Veggie Salad at Subway--no cheese and vinegar only dressing--is just 60 calories and huge.
