Default Recipe for stuffed chicken?

I thought I remembered a recipe for chicken breasts stuffed with laughing cow cheese...does anyone remember this? Or know of something along those lines? I think I'd like to do some sort of baked chicken tonight...THANKS!

I took chicken breasts, cut them in half longways (butterflied). Season the inside. Layer ham and swiss cheese, then fold up the chicken. Brown both sides of the chicken in an oven safe skillet. After browning, put in oven at about 350* till the chicken is done. It was really yummy.

When I made this, I didn't take into consideration that the ham and the swiss are both salty, and I over-salted the whole thing.

I also do pretty much the same thing, but with LF feta mixed with spinach (I find frozen spinach works best). If I want to get real fancy, I'll add toasted pine nuts.

Mmmm.....sounds yummy...though we're a non-pork family...but maybe I can just do the laughing cow, spinach and pine nuts!! Or maybe I'll mid laughing cow with a little pesto? Mmmm....delish! Thanks everyone!!
