Default Moving, ahhh!!!

In mid-February I'm going to be moving from Washington State, back to North Carolina.

Starting on the 13th we're going to pack up my stuff, and then we won't reach North Carolina until the 24th, then we unpack which will hopefully be done by March 1st.

As soon as I get to North Carolina, kitchen stuff gets unpacked FIRST so that I can go to the grocery store and get all of my healthy foods and be good to go.

But that leaves 11 days of pure food

What am I going to do?! I'm at such a loss... we're driving to California to pick up some stuff from my grandma, then to Arizona to see my grandpa for a day, and then we're on the road, 6 days in total are going to be spent purely driving.

I'm a serious snacker, I know that... and I'm going to have to fight it really hard while I'm driving. Not to mention that I'm vegan so I don't know what on earth I'm going to do to stay healthy during this trip.

I know it's still a month and a half away but I'm freaking out about it now, lol.

Any tips/ideas?

Grocery stores have salad bars, that is what I would do at as many rest stops as possible. That and pre-baggie up as many snacks as you can - veggies and whatnot and get a cooler. Lots of water, healthy nuts, Cheerios. That would be what I would have with me to tide me over. Good luck, that is one heck of a road trip. DH drove our car from GA to WA and I opted to fly

One advantage is that you will be driving during the cooler months. Take a cooler with you and take stuff with you in the car. Nuts, dried fruit, snack bars, etc. Stop at grocery stores along the way. Although not an optimal choice, Subway is nationwide and if you carry some hummus with you, their veggie sandwich is a decent option. Also look at happycow.net and try to find options along your driving route.
