Default question about tonight's dinner (bean soup)

Hi!

I just threw in all the ingredients for white bean and sausage soup. It seems to be calling out for a can of diced tomatoes, but since I've never made the soup before, I wasn't sure. Has anyone tried this?

I think diced tomatoes would be great. I generally add them to my bean soups.

Well, I was starving, so I ate a bowl without the tomatoes while I thought about it and then I added the tomatoes and had another bowl. I am now completely stuffed- it had been too long since I'd eaten and I ate fast. Anyway, here's my verdict. I prefer the soup without the tomatoes BUT it's still really good with the tomatoes and I have trouble getting all my veggies in so I'll probably make it with them in the future.

I usually add some sort of tomato product (whether it be crushed tomatoes in Minestrone or chopped tomatoes and tomato paste in Chili) in all the soups I make....they just seem to add a little something.

Soups are also a great way to get extra veggies in!

White bean and sausage soup sounds awesome. Do you add spinach or any other greens? I have a recipe that doesn't use it, but I always add either spinach or kale.

I am making that for dinner tonight too! One of my faves...
I agree though, I prefer this one without tomatoes, just a personal preference.
I do usually add baby spinach to it.

No greens, just tomatoes. I used the recipe from the P1 Soups & Stews. It would also probably have been good with shaved Parmesan on top. I love white beans with Paremsan anyway.
