What's for dinner? 12/14-12/20
This is a popular thread, so I'm starting a new one for the new week ahead.
Tonight's dinner was a version of the Artichoke Chickpea Curry, but I added some fresh spinach, diced tomatoes, and shrimp to it. Delicious!

I had sauted tofu slices, w/sauted mushrooms & sundried tomatoes, and whipped sweet potatoes.

Tonight we had steak with all kinds of seasonings on the grill with Splenda sweet tea and a sugar free fudgsicle for dessert!

sweet bean burritos (sweet potatoes and black beans), wrapped in ww tortillas with fresh homemade pico de gallo for garnish.
They are very filling so maybe just a light salad on the side.

Tonight is lamb stew with lots of carrots and whole wheat egg noodles. We'll also have a side salad.

Tonight was salmon patties and green beans. Tomorrow night will be tilapia with a citrus soy glaze. The recipe is called Pan Seared Mahi, but I'm adjusting it for the tilapia I already have. Any suggestions for sides?

WW penne tossed with chicken sausage, red peppers, onion, yellow squash, and canned, diced tomatoes- this is a favorite at our house!
