Default Dinner tonight? For the week of 12/8-12/13

I haven't seen any dinner threads like we used to have and I kinda miss them. They always gave me good ideas so I decided to start one this week(sorry if I stole anyone's job).

Tonight I'm thinking spaghetti squash with some NSA tomato sauce and some parmesan cheese. Maybe a salad on the side. What are all of you having?

We're having red beans with turkey smoked sausage and brown rice. Something quick and rather easy.

We're having a dish with whole wheat penne and ham, mushrooms and broccoli with a sauce made from fat free evaporated milk, reduced fat swiss cheese, mustard powder, salt, pepper and a little cornstarch.

JerseyGirll, did you have your spagetti squash for supper? That's exactly what I had, but mine was leftovers from yesterday. Still good, though, and I melted a little LF mozzarella cheese over it.

Cottage ...yes I did have the spaghetti squash...i finally started cooking it in the oven again and remembered why i love it so much...during the summer i would always boil it so I didn't have to turn the oven on..its just not the same. I've never tried it with mozzarella but that sounds good. I'll have to try that next time! I've only tried parmesan.

jersey girl- have you tried making it in the microwave? I really like it that way- I just cut it in half and gut it cook one half at a time in a pyrex dishopen side down with about a 1/2" of water covering the bottom of the dish. I poke the skin with a fork quite a few times and believe I cook for about 15 minutes. yum!

Tonight I believe will be vegetarian chili with salads!

Where do you all get no-salt-added spaghetti sauce? I am only on Day 2 of Phase 1 but am thinking ahead.

justbeelieve: I don't know about anyone else, but i just make it my own with canned no-salt added tomatoes (DelMonte). I do add salt during the cooking process, but just a few shakes.
