Should say delicious dinners - please feel free to post a week's worth, a few days or today's dinner.

I loved this thread in the past. It has given me ideas! So, I thought I'd continue on. Let's share...ya just might inspire a friend.

Tonight - tuna salad made with lite Miracle Whip, celery, chopped pickles, and few chopped green olives, garlic toast, steamed brocolli.

Talapia & brown rice tonight
Some of that yummy broccoli and cheese soup (posted in SBD, Soups - ph2) and toast tomorrow
Not sure about Wednesday... I hear it's supposed to rain. Might be another good soup night! Homemade chili and yukon gold potatoes, maybe?

Monday: Baked yam koftas in green sauce (made with green bell pepper, peas and cilantro) and a baby asparagus frittata (if you live in NorCal, asparagus is $1.99/lb at Safeway! that's out of control! buy some!)

Tuesday: ww penne in red pepper sauce with broccoli and slivered almonds

Wednesday: Vegan mattar paneer (tofu in place of the paneer -- yum!)

Thursday: Black bean cakes with orange-basil salsa

Friday: LEFTOVERS!

Yay - thanks for starting the thread!

Saturday - Sausage and Lentil Soup

Sunday - Chicken Chili (and it was SPICY!)

Tonight - Chicken skewers, butternut squash cubes with pumpkin butter, brussels sprouts

Tuesday - I am going to an election soup party. I'm in charge of the vegetarian selection (curried roasted pumpkin soup) and the host is making a Mexican Chicken Tortilla.

Wednesday - Whole wheat penne, roasted vegetables, and extra lean ground beef meatballs.

Thursday - BBQ Pork Tenderloin Roast, Lentil and brown rice pilaf, green beans with lemon and garlic

Friday - Stuffed hamburgers w/ caramelized onions on sourdough, side salad

Monday: Gnocchi Marinara with ground turkey

Tuesday: Salmon and Orzo pasta Salad

Wednesday: Individual Sheppards pies with lean ground beef

Thursday: Herb Marinated Steak and Veggies with Brown Rice

Friday: Herb Stuffed Shells with garden salad

Saturday: Left overs or out to eat!

Nothing special this week except for the turkey meatballs I'll be making. They've become a regular addition to our dinners!

Got the recipe from Cooking Light a couple months ago. They are soo yummy!

WOW!! Y'all have some great ideas. I keep eating the same thing over and over, and they are very simple things. I need to start looking in the recipe files

12 grain pancakes (mine made with three egg whites), sugar free syrup, 2 slices boca bacon (soy), and carrots

Tonight i have no ideas because i'll probably be in line voting , i'll probably just have leftover chili whenever i get home.
Tomorrow : Crockpot chicken and dumplings
Thursday: Lemon fish, wild rice, and mixed veggies
Friday : Egg souffle w/ veggies and biscuits
Sat : Family pizza night
Sun : Steaks on the grill with sweet potatoes, and some salad

Beverly Joy - Have you ever tried the King Arthur Buckwheat pancake mix? It's REALLY good. We make with egg whites and top with either pumpkin butter or with blueberries.

I'm enjoying this thread.

Last night I make turkey chili (ground turkey, beans, salsa, garlic, yellow squash, broccoli) and served in on baked potatos). Tonight might be shrimp--we'll see---time constraints and all.

Tomorrow will be roasted chicken & roasted butternut squash. Yummo!
