Default Delicious Dinners Oct 27 - Nov 2

Let's make this a weekly idea thread for low-cal dinners.

My plan for the week:

Monday - Grilled marinated chicken skewers, roasted butternut squash cubes, steamed broccoli

Tuesday - Whole wheat penne with roasted eggplant, squash, and red onion, with extra lean ground beef meatballs

Wednesday - Chicken breast stirfry with loads of veggies, over brown rice.

Thursday - Lean beef skewers, roasted potato wedges, green beans with lemon and garlic

Friday - Homemade shabu shabu with my family to celebrate Halloween!

Tonight - Turkey Burger on Extra Fiber English Muffin with one slice Alpine Lace Cheese and Slice Tomato; Butternut Squash with Apples Casserole.

Tomorrow - Yoga Night! Leftover Sweet Potato Corn Chowder.

Wednesday - Vegetarian Chili, Homemade Cornbread.

Thursday - Spaghetti with Vegetarian Italian Sausage and Zucchini.

Friday - Tofu and Mushroom Stir-Fry with Brown Rice.

I've only got tonight and tomorrow figured out so I will share those.

Tonight: I have been perfecting a recipe with wheat angel hair pasta and I think I have done a mighty fine job if I do say so myself.
It is angel hair pasta with a light margarine and lemon juice "sauce" mixed with tomatoes, green onion, parsley, mushrooms, parmesan, and onion.

Tomorrow: Protein "scramble" with egg whites, tomatoes, mushrooms, baby spinach, and a wedge of babybel cheese. Side of toasted mini pita bread and maybe some yogurt.

I just plan one day at a time.

Tonight: Grilled chicken breast topped with salsa. Steamed broccoli and a banana.

Not sure what I will eat on what days but here is what I bought in groceries:

Steamed Salmon with Green Bean Stir-Fry

Oven Fried Grouper with Green Bean Stir-Fry (my new favorite recipe)

Lean Cut Round Steak with Kale Stir-Fry

Parmesian Asparagus and White Bean Pasta

Oven Fried Grouper with Asparagus Stir-Fry

Lorilove - how do you make your green beans? I quick-saute mine, then steam them with a bit of chicken broth and a "paste" of lemon zest, minced garlic, cracked pepper, and kosher salt.

Tonight we had Turkey breast, parmesean cauliflower and home made honey wheat bread!!

I am so proud I made my first loaf of bread today!! It was pretty good too!

Monday night - Sea bass in a creamy curry sauce, over brown rice. steamed green beans on the side.

Tuesday night - seared ahi salad with a soy ginger dressing

I live by myself and tend to cook in batches, so for tonight and the next four nights, it will be butternut squash mac & cheese with chicken.
