Default spaghetti squash

This is definitely going to become one of my staples to keep in the house... I am thinking weekly I can cook one and have it around for a side or snack. I made one last night for dinner- ate half then and this afternoon I had the other half!

I made it with Parmesan and garlic and salt and pepper but I could see this satisfying my sweet craving with maybe pumpkin pie spice and splenda or something...

Anyone know how long this will keep cooked/uncooked?

ANy other great ideas for using spaghetti squash(besides in place of pasta)

Yum! Spaghetti squash is a staple in my house, I have it at least once a week and cook it numerous ways.
Once cooked, you should use it within 3 days, but I believe you can store them in a dark, cool place for a couple of weeks. I've also had good results freezing it after it's been cooked and shredded.
If you enjoy it sweetened, try it with a little Smart Balance spread and a drizzle of SF maple syrup.

Great minds - we had spaghetti squash too, with the last of the season's italian peppers, eggplant, shrooms & gimme lean sausage.

I've heard you can keep it for quite awhile is a cool dark space. Unfortunately my space is unpredictable so I'm not sure.

Cottage - that's great to hear about freezing! The one I made tonight is huge so I think I will freeze half rather than OD on it this week (we still have 2/3 of dinner leftover!)

I made that southwest spaghetti squash a week or two ago, and it was yummy!! (and I'm not a big fan of spaghetti squash)

I'm a fairly new spaghetti squash convert too. Recently I made an SS Deep Dish Italian Pie that was really good. It's posted in the Ph1 Dinners.

I too an a new spaghetti squash lover. I dh loves it too. I had my dd and her dh over for dinner the other night they loved it too!
