Default cabbage and vegetarian and phase 1 ideas please :)

So, I have a cabbage and was going to make the lazy cabbage but decided i would check here if anyone has ideas on what to make with it! I can definitely substitute some meat replacements with meat so even recipes with meat would be appreciated!

I was kind of thinking of mayking up my own recipe with cabbage, veggie sausages, (potatoes and carrots for dh) and throwing it in the slow cooker- what do you guys think?

personally, I don't like to use cabbage in the crockpot as it gets a bit overcooked. Sometimes I add it later on after the rest of the stuff is cooked.

Default Cabbage rolls

When I was doing Phase 1 Atkins (which is similar I think), I made some tasty cabbage rolls that we great for grab and go lunches. I just sautéed some green bell peppers, garlic and finely chopped cauliflower, added ground turkey (though rehydrated TVP would work great too) ,and some lemon juice and other spices until cooked. I boiled the whole cabbage for 8 min. and let it and the meat mix cool. Then I peeled off the whole leaves, stuffed them with the meat mix with a bit of low fat sour cream and cheddar cheese and rolled them up like burrittos then baked them for a while just to let them warm through. You could easily change the spicing in the "meat" to whatever strikes your fancy.

Okay, not actually a crockpot recipe yet but a rally yummy cabbage recipe

Bounty Rice with Cabbage & Crumbles

I added lots more cabbage, less rice

1 package crumbles
1 cup onion, chopped
1 cup green pepper, chopped
4 cups canned tomatoes
1 cups cabbage, shredded
3 cups cooked rice
1 teaspoon salt
1/2 teaspoon each: dried oregano, dried basil, garlic powder
1/2 cup rf sour cream (or fat free plain yogurt!)
1 cup rf mozzarella cheese, shredded

Sauté crumbles, onions and green pepper in skillet until vegetables are soft. Stir in tomatoes, cabbage, rice and seasonings. Cover and continue cooking until cabbage is crisp-tender, 10 to 15 minutes. Stir in sour cream and sprinkle cheese on top. Cover until cheese is melted.

Variation: Omit sour cream and add 1 small chopped hot pepper, 1/4 teaspoon cayenne pepper and a few drops of hot sauce to the meat mixture along with other seasonings.

Serves 6 to 8.

Try the lentil and smoked sausage soup I posted in the entrees phase I. It's actually vegetarian, and many have made it in the crock pot.

The second time I made it, I added much more than the recommended 3/4 cup cabbage (and I did carrots too - although that's not phase I!).

I already made it thatnks twynn- I am looking for recipes without beans right now... Last 9 meals had beans, and my tummy doesn't want anymore!!!

Cyndi- that sounds really good- I used to make a recipe with cabbage and ground beef that sounds similar but used tomatoes with green chilis instead of plain tomatoes... it was prttey good too!

Sorry about the rice, I noticed the P1 after I posted it. My other favorite cabbage thing is in a sauce with ff yogurt and good paprika. The sauce is based on a recipe in The Frugal Vegetarian but the cabbage is particularly good in it. Cabbage was one of my mainstays last fall when I first started SBD. It's filling, it's full of fiber, and it's virtually calorie free. It's one of my favorite plate fillers when I'm really hungry. Now I shred it and serve it under all kinds of saucy dishes I used to serve with noodles, potatoes or rice.

Do you shred and cook it or eat it raw? I am scared to eat too much cabbage raw, like I will only have a couple tablespoons of coleslaw at a time because I believe it gives me horrible pain in my sides because of gas- I think! A couple times I ate too much and I was up for a few hours in the middle of the night doubled over in pain! oh, it was horrible! its kind of made me afraid to eat cabbage raw!

I saute it with a little water or vegetable broth. a lot like noodle I do munch on cabbage when I'm chopping it up but don't eat it raw otherwise. No particular reason, I just never have.

here is what I did...

Tomorrows lunch/dinner is in the crock pot. I decided to put 4c water with 2cubes veggie boullion, 3/4 head of cabbage wedged, 2 potatoes(for dh), a few baby carrots(dh as well), a few chunks of celery, red pepper, and 2 boca brats sliced up since I couldn't find them anywhere anymore and there were only 2! I also threw in a bay leaf, some thyme and a few cloves of garlic chopped up. oh, and a yellow onion wedged as well... Hopefully it will turn out good.

Well, I cooked it overnight- and it is yummy- I had a bite this morning to see if it was done and it was fabulous! Cyndi- I think those boca brats are definitley the way to go when cooking any veggie sausages for that long- they still have lots of flavor!
