I read on another thread here that TVP was a good sub for, or a good addition of, much needed protein to the in the post surgery diet. So I went to find out more.
I found it in the Bulk or health food section of our neighborhood Fred Meyers (grocery store). I tried it in my Beef soup recipe and it was good! It has very little flavor itself but, like couscous, it picks up the flavor of whatever you cook it in. It made it kind of like a beef and barley soup or beef and rice, as it were.

Beef and Mock Barley soup
This could be easily be changed into
"Chicken and Mock Rice" with less fat and cals.
3 oz lean peppered steak (cubed and browned)
1 cup TVP
2 quarts water
2 organic diced carrots
2 stalks diced celery
1+ TBS beef boullion (to taste)
1 small diced potato (optional)
combine and boil for approximately 30 mintues.
Stats for entire pot (I know, I know...take me 3 days to eat the "entire pot" but made the calulations easier!
