Are Pork Chops considered good meat to eat? I need more variety in my diet so I was wondering What kinds of meals do you eat for dinner. Like chicken with veggies? Also what do you eat for on the go. I am in college with a 1 yr old and I work alot so I need some stuff besides box meals and lunch meat sandwiches to eat.
Pork can be a great choice if you go for the lean cuts. Look for pork tenderloin or center cut pork loin chops. Pork tenderloin is a great, easy meal. You can buy it pre-seasonsed and just stick it in the oven. Same thing for turkey tenderloin.
These are the meats that are regular rotation on my menu:
Chicken breast, lots and lots of chicken breast. I eat it broiled, sauteed, pounded flat and sauteed, stir-fried, stewed, braised, stuffed, ground and formed into patties. I am the Woman of 1,000 Chicken Recipes.
Pork tenderloin. We also eat this lots of different ways: roasted, broiled, pounded flat and sauteed, pounded flat and stuffed then broiled, stewed, stir-fried.
Pork loin chops, broiled or sauteed
Lean ground beef, usually in casseroles, chili, or meatloaf
Lean ground pork, stir fried or in meatloaf
Lean ground turkey, in tacos, casseroles, chili, or meatloaf
Turkey sausage, with pasta or veggies, in casseroles, or in stews or chili
Chicken sausage, on a bun like a hotdog
Fish, broiled, sauteed, and in stews
Turkey tenderloin--this is my newest addition to the rotation. Super easy and very tasty

Lean beef -- usually tri-tip

It isn't a meat, but I make a lot of meals with eggbeaters. It's great stuff, lots of protein for the calories, and versatile. You can do omelets, frittatas, or sometimes I just scramble it and toss it onto a salad. Cooking eggs is quick too, so it's good for those busy days.
For on-the-go lunches, I usually pack something like a salad, fruit, lean protein, nonfat lite yogurt, things like that. I make sure to cook extra meat/protein and steamed/broiled veggies at dinner for that purpose. It's easy then to assemble a lunch with pre-washed lettuce and leftovers. You can even buy little packets of fat free dressing nowdays. It does take a little more pre-planning and effort, but it is certainly worth the extra time to be in control of your lunch!
We eat a lot of pork. We buy whole loins at Sam's Club and then cut them down into loin chops and roasts. From one $17 loin, we can get 14 or so chops and 2 roasts.
Other meat I eat a lot of:
* chicken breasts
* ground turkey
* lean ground beef (we usually mix turkey and beef 1/2 and 1/2)
* mahi
* salmon
* shrimp
When I want to splurge, I either get filet mignon or scallops (or both).
Every now and then I get surimi (the fake 'crab') and use that in a seafood salad or pasta salad.
Our grocery store just had a meat sale and we stocked up on poin loin. Got two huge ones for less than $3 each!!!! Amazing. One will feed the two of us for 5 meals. The bf has a great recipe and he grills the loin. Grilling is the best way I've eaten a pork loin.
We also do chicken or beef "tacos." Cook up the meat, add beans, cheese, olives, whatever, and put in a toasted low carb pita.
Last night we had beef jerky for dinner. Weird. But it was surprisingly filling (I got lower sodium jerky). I intended on getting some and snacking on them while I cooked dinner, but we were both so full afterwards we skipped dinner.
Since your short on time I would also recommend lean cuisines.
We eat pork loin about once a week at least. I marinade it (you kind find alot of lower calorie marinades, or just use fat free italian dressing) or i use lite low sodium soy sauce and garlic. I have even used Mrs. Dash. I then plop it on my George Foreman grill and it is done in no time. You want to buy you lean center cuts though.
