Default How do you like your veggies?

Ok, let's post a few ways we enjoy, or tolerate in some cases, our veggies. If there is a great recipe from the recipe threads........post the link here. Somedays it is more difficult to get them in than others, so let's put our heads together and make this as easy as possible

I know I've said it a millllllion times, but I LOVE LOVE LOVE the prepackaged single serve brussell sprouts with I can't believe its not butter spray. I've also started eating turnips, my COD called the dietician and they said that you can use them as a vegetable. I've also heard you can mash them like potatoes, but haven't tried a recipe yet.

Hmm, I would have thought turnips are a starch? I love turnips.

I love my veggies on pizza. LOL! I use a ww wrap (1 starch), 1/4 cup pizza sauce (as 1/4 serving veg) then add veggies as per your plan with cheese to your discretion..I use 1/4 serving (.5 oz). Obviously this is a once a week treat.

Or I use the wrap and cook up yellow peppers and onions in lemon or lime juice with chicken and salsa and cheese for a wrap.

Other than that I have started just eating my veg raw as I am a tad tired of salads and stir fries.

I buy big bags of frozen broccoli and cook as needed in the microwave and them melt low fat american cheese on top. Last night, I made rotel with lowfat velveeta and dipped raw cucumber and broccoli in it (rotel is high in sodium so should probably be used only occasionally). I make a lot of chicken, peppers, and onions sauteed with Pam and roll it up in a tortilla. I like to put mushrooms in omelettes. Most of my veggie solutions involve cheese!

I struggle with getting in my veggies too but have found that zucchini sauteed in a little olive oil and lightly sprinkled with parmesean cheese does the trick everytime!

I love making egg white omelets with green peppers, tomatoes, onions...basically whatevers in the fridge! lol Add some salt and pepper to taste and its delicious.

When I am not in a mood for cooking or salad, I eat baby carrots - on my plan 6 baby carrots make 1 Veggie, so I will eat 12 in dinner to make it to 2 veggies. Sometimes I use low fat ranch with them.

I also buy frozen veggie bags and microwave them (about 10 minutes) and add ICBINB, salt, pepper and scrambled eggs / grilled chicken. This is the most common dinner for me.

I love to grill zucchini, squash and eggplant. You can also roast eggplant by cutting up eggplant into large cubes. Drizzle with balsamic vinegar and maybe 1 tbsp of olive oil. Bake at 350 for about 1 hour and stir occassionally. It is awesome on bread with hummus and eggplant

I love steamed broccoli - could eat it everyday.

We grill all year, and one of the things that I do is take zucchini, yellow squash, peppers, and tomatoes, toss with a little olive oil and balsamic vinegar and grill in a foil pan or veggie grill basket. Yum!

two more ideas - they sell frozen asparagus, which heats quickly in the microwave and is delicious with CBNB spray.

Also, most fresh veggies can be steamed in a couple minutes in the micro as well - I use ziplock baggies to steam cauliflower, brocolli, zucchini, etc and just spray the **** out of them with CBNB spray.

Most of the time I just eat them raw... grape tomatoes are my newest fave since they are on the super foods list and are super easy!

OH - snap peas either fresh with ranch dressing or steamed in a ziplock in the micro.

i love to take a bunch of fresh asparagus and roast it in the oven with balsamic vinegar, garlic and black pepper and a touch of olive oil. i roast it at 450 for about 10mins. it's awesome.
i also love taking a bunch of cherry tomatoes, olive oil or nonstick spray in a pan with some garlic and heat it until the tomatoes pop open. and add some basil and then use that over some whole wheat pasta with a bit of fresh parmesan cheese. it's amazing.

another thing i do is do roasted red peppers (in the jar) and make some grilled eggplant slices in a pita with some ff ranch and lettuce. it's a great lunch.

Ooooh, all of these sound sooo good! Lately I have been taking big zuchinni, cutting them in half, hollowing out the seeds, and stuff them with turkey meatloaf and baking them. So yummy. Also, green pepper hollowed out and stuffed with meat and a little macaroni, onions, tomatoes, seasonings, etc, and baked. Really nice.

Jillian. I'll have to try that asparagus recipe.. Sounds good.. Well, edible anyway, as I'm not an aspargus fan..

I generally saute zucini with Pam and a teaspoon of Smart Balance (mostly for flavor) just before it's cooked, I pop in some fresh garlic.. But don't let it cook too long or the garlic will turn out nasty..

As to the real answer to the original question:
