Default Need Healthy Cookout Ideas Please.......from appetizers and entrees to desserts

well here we are 3 days from the 4th of July ALREADY, geesh time flies! anyway i have a few ideas for our annual cookout, but i would like to go into this with an arsenal of food, the more nummy (but healthy) selection i have, the more likely i am to stay on track.
no matter what plan you happen to be on, please, if you have any suggestions it would be greatly appriciated.

Pico de Gallo is a good salad. Cucumber, jicama, watermelon, lime juice and a spicy salt blend called "Pico de Gallo" sprinkled on top.

I'm making and bringing shishkabobs, skewered chicken breast pieces, with onion chunks, green peppers, red peppers, yellow peppers. Great on the grill, and oh so yummy.

I'm Also bringing fruit kabobs Speared strawberries, grapes, pineapple chunks, alternate again up the skewer...
If you want to keep with the red, white and blue theme for the kabobs, spear strawberries, a big marshmallow, and 6 blueberries, repeat layers up the skewer. Can use a blueberry yogurt for dipping!

NOTE: If you don't have skewers for the fruit, just use a plastic knife, spear them up and then they have a little handle to hold onto (Nobody ever uses the knife it seems in the plastic utensils, so I use them for my fruit kabobs, pretty ingenious I think!)

If it fits into your budget, shrimp is always a hit - either cold as shrimp cocktail, or grilled as the meat in a kabob.
