Default Low calorie, 4th of July recipes

Every year we go to the same park and watch fireworks. We usually get pizza, fast food etc to take with us and the kids eat, run and play until dark. What can I put together at home for all of us (me, husband and 4 kids) that is low in calories but tasty and can go along with us? Thanks

I too struggle with feeding a family healthy foods on the go.

In keeping with the 4th of July theme...

Blue Corn chips and salsa
White Grapes, blueberries and strawberries in a bowl or skewers
Make your own chicken cutlets to eat like fried chicken
Wraps w/ veggies, cheese, chicken or low fat cold cuts inside

we do this same thing every year .. we go to the town festival .. and the kids all play with thier glowy necklaces , we them each one "super toy" we usually eat dinner there .. and its the infamous italian sausage sub and french frys .. then comes night time when the fireworks start and we want orange slushies or lemonade and fried dough!!!! ( fried dough UGH ) but its soooooooo good to eat while watching the display ... this year we are going to a bbq first .. and I'm going to bring some fish and veggies to grill for myself and hopefully try to fill up as much as possible before going .. neither of my kids will eat fish or chicken so I'm jsut going to let them have a hot dog with lots of fruits and veggies ...

as for the night time ... I think I am going to stick to the lemonade and fried dough its just to much of a tradition... Im not perfect its my treat ( for the YEAR) and at least I'm cutting out the sub and fries

maybe if your packing food to bring with you .. you get make them a sandwich .. like a pb and jelly or turkey or ham or something and the suggestions for the festive mix of fruits is a good idea too! easy and good ... and maybe some cucumber slices or soemthing .. not sure really how picky your kids are ... mine are REALLY picky

I like my Grandma's Sweet and Sour Cucumber and Onions salad (it's an old fashioned recipe... but, I use splenda instead of sugar)

Make night before

4-5 cucumbers - peeled, also scored with tines of fork to make them look pretty when you slice them into the circles.
2 cups warm (not hot) water
2 cups vinegar (I use Pompeii red wine)
1 cup splenda
1 sweet or red onion, halved, then sliced

Put cut up cukes and onions in bowl.Combine splenda in warm water until it dissolves. Add in vinegar and stir. Add liquid to veggies. Salt and pepper it. Must do this the night before. It's delicious and now calorie.

Have fun.

Something that I like is angel food cake with strawberries and blueberries sweetened with a bit on Splenda... the angel food isn't TOO high cal. Also, I like to bring my little camp BBQ and you can grill anything right there (if they allow BBQ's).
