Default Pancake Problems

Hey ladies,

I tried making the mock french toast/ pancakes and the were really runny, I mean REALLY RUNNY. I even added some beans to try and thicken them up. I had less than zero luck making pancakes out of them. They stuck and ran all over the pan. I ended up baking them and that was alright, but not great. Any advice? Please help.

You could probably try one less egg white or more ricotta. OR, add all the ingredients except for the egg whites. Whip the egg whites until stiff and fold into the other ingredients.

That will make them pretty fluffy, and beating the egg whites will thicken them quite a bit without adding extra bulk or calories.

I generally add a little extra ricotta.. especially because I divide the pancakes between DH and I. Alone that would be too much for either of us!! LOL
Zef: I will have to try your advice on fluffing them up a bit.
I honestly love these more than regular pancakes!! They cook quicker and I like them a bit better!! I always sprinkle a little splenda on them (mock powederd sug)

I made them for the first time this morning and all went very well. I put all the ingreds in a mini-blender (did add a little extra ricotta) and blended till smooth - I thought it was very thin and wondered if it would firm up - but it did. Kept wondering when to flip it so I waited till big bubbles came to the top. Had sprayed the pan and spatula with Pam. I was very surprised at how well they turned out and tasted - just added my Walden Farm syrup and I really felt like I was having a treat after 3 weeks of eggs for breakfast. Try it again - it's worth it!

I forgot to mention also that it is really runny, but when pouring into pan, only do a little bit at a time, and then let it set... I also will let it set and then the extra liquid, I tilt the pan and get it to one of the edges and then it sets up. These cook very quickly, which is very nice

I'm not a regular South Beacher, but I do make a high protein pancake with oatmeal, egg whites, and cottage cheese that I just

Anyway, my point is . . . if the batter looks a little too runny you can add a spoonful of Metamucil (I like the orange flavour) and let it sit for a few minutes -- I know you can have metamucil on South Beach.
