Default What's for Dinner 5/12 - 5/18

Thought I would start this thread for the week.

Tonight we're having Big Easy Shrimp (from the 2nd SBD cookbook) w/ Brown Rice & Green Salad.
Dessert will be Strawberry-Lemon Ricotta Mousse.

I'm still trying to decide. DH is cooking dinner as sort of a late Mother's Day thing. We were at his parents house last night for dinner.

Anyway, I can't decide between chicken stuffed with herbed laughing cow cheese and coated in ww bread crumbs or chicken parmesan. They are both pretty easy, so I don't think hubs will have a problem. I also had prepped some turnip greens, edamame/red pepper mix and broccoli.

Dessert might be some iced coffees.

I'm all alone for dinner until Thursday night, so I'll just be making a Taco Bake tonight and eating that with salad the next two nights.

I've got a 4-bean with turkey sausage thing in the crockpot for a cold, rainy, windy day. I'll make salad and some veggie to go with. I don't think the kids'll be thrilled, so I may put some oven-fried chicken legs on for them.

I have shrimp to do on a skewer on the BBQ and will do peppers, onions and mushrooms the same way. I have a big bunch of my first asparagus which I'll steam and have with a very tiny bit of lemon butter. I may do a lemon ricotta creme for dessert since I seem to have some ricotta in the fridge. I think I bought it instead of cottage cheese.

I have to cook tonight and I never cook so I will make a thrown together chicken stir fry (chicken, veggies, brown rice & low sodium soy sauce)

Zeff - I've made the shrimp a lot (when the book first came out). It's REALLY YUMMY, and pretty easy to throw together. I'd highly recommend it.

Ruth - Have you ever grilled your asparagus? It's a really yummy way to eat it as well if you're already grilling a bunch of stuff.

Garlic Lime Chicken (from here), poss w/ Zucchini puffs (from here), and other veggies

Hamburger Steak w/ smashed cauliflower

Grilled Swordfish w/ salad

Broiled Shrimp, w/ oriental cabbage

Chicken Fajitas (no wrap for me!)

The past two nights I made the most delicious dinners. Last night I made the Portobello Mushroom Pizza and tonight the Almond Crusted Chicken with broccoli alfredo. I highly recommend both dishes. I am actually cooking better than before I started SBD. This plan just might make me a good cook yet.

DH messed up my plan. He was seized with a burning desire to go to the Chinese buffet tonight (maybe he looked at my beans in the crock pot and wasn't inspired). So I had some of my beans before we left (they were VERY good BTW), and just had some garlic green beans and egg drop soup at the buffet. Well, at least I've got lunches for the rest of the week.
Amy, I love to cook, but SB has definitely improved my cooking. DH loves it ( except on bean night, I guess).

Hubs decided he didn't want to do anything in my plan....which I can't really say anything about, because he is cooking. I can't give him too hard of a time, he only cooks once or twice a year!

He is making ww pasta with shrimp, peppers, pepperoncini peppers, crushed red peppers.....sounds pretty good and all OP. I think he is planning on making brussels sprouts also. No idea what he has planned for dessert....probably nothing....which I will soon change

I worked a long, very busy 12 hour shift. DH cooked as he always does when I work. He made an omelet w/bacon, mushrooms, onion, tomatoes, red peppers & feta cheese served with brown rice.

hubs actually came on the site and found a dessert that was also OP. He made the "Peanut Butter Cup" that Ruth posted. It was soooooo good! Perfect for that little somethin' somethin' that you want after dinner. I can definitely see it being a saboteur though, so I need to limit myself to just having them once in awhile.
