Default Healthy Passover Recipe Suggestions

Hey guys! So my mom is having Passover at her place this year and I volunteered to bring a dessert. I would really LOVE to bring a healthy Passover recipe so that I can actually eat with everyone else, because otherwise I know the desserts other people bring are going to be loaded with oil and butter. Anyone have any suggestions???

I can't post links yet (my post count is still too low ) but there is a 3FC thread called "Passover Recipes" that has some good suggestions, including a lemon sponge cake which I plan to try - 117 calories for 1/16 of the recipe. You could even top it with fresh blueberries or strawberries. I have also seen recipes for Pesach Angel Food Cakes, which would work well with fruit, too.

Or, maybe a nice fruit salad?

Oooh what's the recipe for Pesach Angel Food Cake? I know you can't post a link but can you type in the ingredients, recipe and nutritition facts for me? I'd really appreciate it because it sounds yummy!

There is also this one:

1-1/2 cups sugar
1-1/4 cups matzo cake meal
2 tablespoons orange zest, finely grated
1-3/4 cups egg whites (about 12 large)
1/2 teaspoon salt
2 tablespoons orange juice

Combine 3/4 cup sugar, matzo cake meal, and orange zest in bowl.

Beat egg whites and salt in large mixer bowl until soft peaks form. Gradually add remaining 1 cup sugar, 1/4 cup at a time, alternating with orange juice. Beat well after each addition. Continue beating until stiff peaks form.

Fold in matzo meal mixture, 1/4 at a time. Use 15 under-and-over strokes for each addition, slightly turning the bowl after each stroke. Fold an additional 10 strokes.

Pour batter into ungreased 10" tube pan. Bake at 325°F fifty minutes to an hour, or until cake springs back to touch. Remove from oven, immediately invert pan and cool.

1/16th =
128 Calories; trace Fat (1.1% calories from fat); 4g Protein; 28g Carbohydrate; trace Dietary Fiber; 0mg Cholesterol; 111mg Sodium.

That's also on the Jewish Food List Website Mandalinn posted about.

If you can find some confectioner's sugar that's kosher for Passover, you could make a nice glaze for it:

1 1/4 c. sifted confectioners' sugar
Grated zest of 1 orange
2 tbsp. orange juice
1 tsp. lemon juice

A tablespoon of the glaze drizzled over a slice of the cake would add about 30 calories.

Oooh Charisma Classic that sounds amazing!

A couple of questions:
1. Have you made it before?
2. If yes, does the cake look and taste like an Angel Food Cake? I saw that there were 2 Angel Food Cake recipes on that site and it said on the other recipe that it "does not have the same consistency, but don't worry it still tastes good." That kind of made me nervous since I'm cooking this for other people and want to make sure it looks appetizing to them.
3. For "sugar" is that normal sugar or do I use like Splenda?

The other recipe that looked really good is the coconut macaroon cupcakes, but I'm having trouble figuring out the nutrition analysis (it's NA on the recipe). Anyone able to help out?

Ingredients:
4 egg whites
Pinch of salt
3/4 cup sugar, divided
1-1/2 cups sweetened coconut, shredded
1/4 cup ground skinned, roasted almonds
2 tbsp. matzo cake meal
1/2 tsp. orange rind, grated
About 32 candied cherry slivers (optional, the cake can be topped with the garnish of your choice)

I've never made the recipe cake before but it's on my menu for this year. That's the count with actual sugar. I don't use artificial sweeteners. I'm sure you could substitute, but I have no idea in what equation or how that would affect the calories.

I don't have a great hope of it looking like an angel food cake, but I do think it will be delicious. We're not using traditional angel food ingredients, and that will surely affect the structure of the cake. I'm not going to think of it as angel food cake. Maybe malach food cake or just cake.

As for the other recipe, you would have to look up the nutritional analysis for each of the ingredients and add them together. That's how I did the glaze. (Which I hope to be able to make!)

I just found this! It will definately help me, and hopefully someone else, too!

Make your own Kosher for Passover Confectioners Sugar:

1 cup minus 1 tablespoon granulated sugar
1 tablespoon potato starch

Pulse in food processor until correct consistency.

I just want it to look edible... I am not the best cook to say the least. There was a double chocolate muffin recipe that looked pretty good too, but my sister's husband is allergic to chocolate so I wish I could like convert it into a banana muffin or blueberry muffin recipe. Clearly I am not a good enough baker in order to do that though.
