Default Chicken Recipie for Mrs. Big Dawg

Here is this DELICIOUS chicken recipie. I don't know who the original person who "Created" it was.. and its been adapted a few times:

If you use 99% fat free chicken breasts this is 3 pts a serving
If you use regular chicken breasts its 4 pts a serving

Cola "BBQ" Chicken

4 skinless boneless chicken breasts (if the breasts are thick, cut into pieces to cook evenly)
1 cup ketchup
12 oz can diet cola (coke, pepsi, whatever)
1 TBsp Minced onion

Put chicken in a non-stick skillet or sauce pan, pour ketchup and diet cola and onion over the top. Bring to boil. Cover and reduce heat and cook for 45 minutes. Uncover, turn up the heat and continue to cook until the sauce becomes thick and adheres to the chicken.

This works best if you don't tell people what its made of until they have already tried/eaten it. It's delicious, and approved by my VERY picky husband

Its great served over rice.

Enjoy!

This is a great recipe. Sauce turns into a BBQ sauce and thickens. Great with meatballs as well.

Sandy - yes I am still around

Hmmm, wonder how well it would adapt to firm tofu.....
