Default need vegan breakfast ideas

Other than a smoothie, what can you suggest for a vegan breakfast?

Hi Suzanne!
I know I'm weird, but I just don't "get" why breakfast needs to be any different from any other meal of the day just because it is morning. Maybe someone will explain it to me sometime....
Ok, that sounds negative, so now I will try to sound positive:

Today at 6:30 am I sauteed onion, carrot, garlic, tempeh, and some jarred korma sauce (oh no! is that semi-homemade??!) but it had no artificial ingredients, and put it over spaghetti squash that I had cooked the night before. It really didn't take that long.

I just don't understand why people need to eat something different in the morning. (?????????????) Hey, it was a lot tastier than cereal.

Also, more in the line of semi-traditional, there is a sonoma diet recipe that makes a spicy tomato sauce with jalapeno/garlic/other vegetables in a sauce and then you poach eggs into the sauce, and for vegan you can just nix the eggs and put tofu in instead. I guess it's kind of like huevos rancheros without the huevos.

if I'm REALLY in a hurry, i *shudder in embarrassment* might look to see if I have a can of peas.....

Are the low carb whole wheat tortillas vegan? I looked over the ingredients list and didn't see anything obviously animal based, but I'm not vegan, so I'm not going to know some of the details like you guys will.

If they are, though - natural PB and banana, or natural PB and fruit preserves, or even beans and tofu in a tortilla.

Tortillas make breakfast portable...makes it easier in the morning.

If those aren't, do vegan tortillas exist?

Most tortillas are vegan (traditional Mexican ones often have lard).

I have lots of "lunch" and "dinner" style meals for breakfast. I like to get in a couple of vegetable servings and love a hearty breakfast, most days.

Today I had brown rice risotto with spinach, red beans, tomatoes, shallots, garlic, basil, pepper, nutritional yeast, umeboshi and brown rice vinegar a along with a glass of orange juice.

Hi!
Oatmeal with peanut butter
scrambled tofu with veggies & toast
scrambled tofu w/ veggies in a wrap
stewed wheatberries with raisins & or cranberries
homemade vegan muffins w/ fruit added

A good resource for vegan foods would be Christina Pirello's cookbooks &/or show. Just google her name & you'll get a ton of info.

Enjoy & have a great day!

Personally,
I want something light and fast so I stick to smoothies.

I have meant to try scrambled tofu because I have heard it is good but for some reason, I never cook Tofu (I know Suzanne is trying to cut down on Soy so....)

Hot cereal with soy or almond milk or some other non dairy milk with berries
Cold cereal with soy or almond milk or some other non dairy milk with berries
Toast with peanut butter (I have some ezekiel cinnamon raisin bread in the freezer that is very good with peanut butter)

Scrambled tofu breakfast burritos with peppers, soysage and FYH vegan cheddar and salsa. Oh, soy sour cream, too. Mmm.

Crockpot steel cut oats with dried fruit.

Soy yogurt and a big bowl of fruit.

Pumpkin or zucchini muffins, yummy and full of veggie goodness!

French toast made with flax eggs.

Vegan pancakes.

I heart Christina Pirello

nelie - Is tofu scramble ETL friendly? It is so good! Get your VwaV out and get crackin'.

I eat the same boring soymilk, cereal and fruit for breakfast every weekday, but I whip up some mean vegan pancakes on the weekend. If you're interested I'll pull up the recipe when I get home.

Shan - Tofu is kind of one of those things to use sparingly on ETL but it is acceptable so maybe I should

It's 5:31 am. Time to make some vegetable "stroganoff" for lack of a more descriptive term.

I'm with you, Jo. I eat more non-"breakfast" foods as my first meal of the day than any other meal.
