Hi Kay, you're in Okinawa, wow! Do you not like V-8 or tomato juice? I drink some every day just because it's an easy way to get in a veggie serving, and I'm a little veggie challenged. But if you don't like it and you like to eat veggies, I think that's fine. You don't have to find a substitute. I sometimes make mine into a Virgin Mary with a stick of celery in it for a change of pace. The V-8 splash is good, but it does have fruit juice in it, so it's not on-plan. If you're trying to follow the book menus exactly, I'd say just substitute a serving of veggies for the V-8, and drink some water.
