Default grilled mahi-mahi with mojito marinade

Grilled Mahi-mahi with Mojito Marinade

Ingredients:

* 1 1/2 tsp. minced garlic
* 1/2 tsp. Morton Lite salt
* 1/4 cup amber (gold) rum
* 1/4 cup lime juice
* 1/4 cup chopped fresh mint
* 1/4 cup chopped fresh cilantro
* 2 Serrano chilies, minced
* 2 Tbsp. olive oil
* 2 Tbsp. honey
* 1 1/2 tsp. grated lime peel
* 3/4 tsp. ground cumin
* 6 (5 or 7-oz.) mahi-mahi or halibut fillets


Preparation:

* With fork, mash garlic and salt to form paste; place in 1-gallon
resealable plastic bag. Add rum, lime juice, mint, cilantro, chilies,

oil, honey, lime peel and cumin; squeeze to combine.
* Add fish; turn and rub to distribute marinade evenly.
Refrigerate 30 minutes.
* Meanwhile, heat grill or broiler. Place fish on gas grill over
medium heat, on charcoal grill 4 to 6 inches from medium coals or 4 to 6
inches from broiler.
* Grill or broil 8 to 10 minutes or until fish just begins to
flake, turning once and spooning remaining marinade over fish halfway

through grilling time.
