It's a soggy Monday morning, great for the lawn and garden! How was everyone's weekend? Mine was busy, busy, busy! Little Carley kept us entertained and laughing, she is such a delight and fun to have around. Amber spent most of the weekend with us, too, since Carley was here, and she loves to help me around the house.
It was a good weekend, eating-wise, too. I haven't strayed even a teenie bit all weekend! My weight has stayed the same, though, but I feel terrific and know I'm doing good things for my body. One day soon I'll probably see my "whoosh!"
Quickie as I slept in until 6:45 and am due at the gym for 7:30. I did a real quick shower, fed the dogs and am sipping a coffee. I'll take some strawberries to eat on my way there. Catch y'all later.
Kind of a nasty day here so far...overcast. Nothing exiting happening..work,work,work.
I tried "converting" my normal roast recipe yesterday and it came out great. But it tasted so similar to way it usually tastes that I felt kind of "guilty". I'm just wondering if it is SB ok. I used a very lean eye of round roast all fat trimmed off, then stuffed it with garlic, then drizzled some olive oil over it and then sprinkled some ww flour over it, then put it in the oven till it started browning, then added 2 packs of lipton onion soup and some water (other than the sodium which is off the charts,) I guess it was SB Friendly? then left it in the oven about 3 more hours. I just replaced the vegetable oil I usually use with evoo and replaced the white flour with whole wheat flour. I haven't seen any SB recipes with gravy, so just wondering. Served it with brown rice and herticot vert and a salad and only ate one and a half pieces of the meat and a little gravy on the rice Think that was OK?
If not, that was my first "cheat" so I can live with it.
Femmecreole, your recipe sounds good! I'll have to try it using chicken one day. It seems SBD friendly to me, but like you said, that Lipton Onion Soup mix is extremely high in sodium. Make sure you drink gallons of water today! Is it neccessary to use the flour to thicken the gravy, that could save you a lot of extra calories and starches if you could eliminate it. Or maybe substitute arrowroot? I don't know how that would turn out, maybe it wouldn't work as well?
I'm back from Curves and enjoying my blueberries & yogurt right now. After I tidy up the house, I plan to finally get my toenails painted and curl up with a good book until it's time to pick up the girls from school. Tomorrow is their last day, and I'm not sure how much my schedule will change for the summer. I'd better enjoy any free time I have while I can!

Actually, I use about the same recipe for chicken, except on the stove top. I saute bell pepper and chicken together in evoo, then a touch of wine to deglaze the pan, then add a packet of the soup and some water or low sodium chicken stock. And you are right, next time I will try arrowroot instead to thicken it.
Yep, that soup is full of salt..I never add any extra salt when I use it to cook.
I used to cook a lot of stuff with gravy and my family has asked for the roast a few times since I started SB...It's my youngest son's favorite, so I felt I had to fix it for them, but try to make it a little more healthy for me..and them. I ate mostly salad and green beans and only a little brown rice and gravy. Won't be something I fix as often as I used to though. Here in Louisiana, we almost live on rice and some kind of rich sauce, which was my biggest downfall along with french bread and butter and bread pudding and other rich desserts. Ok, I'm really making myself hungry...time for breakfast.

ME: We had a good weekend. The weather did get kind of wacky yesterday. Lots of rain and hail and we had a tornado warning for part of the day. Needless to say, we didn't get any yard work done -- at least we didn't have to water!
Today we have a lot going on with errands to run, grocery shopping to do and the house to clean. Starting tomorrow I will be tagging and cleaning stuff for the yard sale on Saturday. Oh! I need to run to the paper and trading post and get our ads in!
Morning chicks... just squeaking in and it is still considered morning. It is raining here and damp. My first and only wee one of the day showed up so I had lots of time to tidy the house and chat on the phone. Other than that nothing. I am starting phase 1 again tomorrow. So I am just getting prepared today. I have dental surgery in the morning so I figured it was a good day to start. Have a great one chicks. Gotta to run and get lunch ready for me dh and the wee one. We had a busy busy weekend. Saturday we were away from home so we ate at McDonalds. I had the Asian salad which was very good. I'm not sure if the dressing was SB approved but i didn't use the whole packet. I ate 1 french fry from my sons meal and realized as i was eating it that i grabbed it out of habbit and i really didn't want it. Ugh!!!
I'll be inside today while my DH installs a ceiling fan in our sons room. A project I've been wanting done for 1 1/2yrs. I don't want him up in the attic alone so I'll be home. Hopefully it wont take most of the day but his ceiling slopes right in the center which is going to make it hard to get to.
I did my elliptical last night for 30 minutes. I was so tired but i had already made excuses on Friday and Saturday so i made myself do it last night. No excuses tonight....I'm doing it!!!
A quick flyby for me Lots of rain all day yesterday..we sorely needed it and more of it! electric is touch and go.. I dunno whats going on with it... but there are men working and bucket trucks up and down the road so must be something big I'm tired of resetting all the clocks

How is everyone doing!.. We have had a week of hi temp's..unseasonally warm,so the a/c went on every afternoon..other than mayo,i think i love air conditioning when it's hot really really alot..although mayo is good anytime. Love the roast rec. I've made it that way myself w/the onion soup..and put it in the electric skillet on low,and cook it for hrs.,add water as the juice cook down,and at the end you have the best scrapings for a loose gravy,DH like's it thickened,but I'm ok with just some drippings..still the fat from the beef makes great taste,and builds hip measurments too Sort of a two for one. We had a garage sale this last weekend,and were able to make about $300...plus cleaned out most of the attic,and closets. Awww more room Amazing the 'stuff'..Dh is really good about sorting stuff to sell..mostly MY stuff haha,so we had his and her's piles just to keep the family of he,and me from getting into any heated arguments It all stayed pretty cool. I only lost a lb.last month,and so I need to get more serious for this month..sorry I missed the sign up for the June challenge,but I will be working toward a better personal best.
