welcome back. all fish is good. you can make a eggplant lasagna. make homemade tomato sauce : can of crushed tomatoes, can of tomato paste, garlic, onion, salt, pepper and a small amount of olive oil. you can even add ground lean beef or turkey or chicken. slice the eggplant thin and use as you would the lasagna pasta. start with the sauce on the bottom, then add the eggplant, add parmasean cheese and maybe some lowfat mozzerella and keep layering.
hope this makes sense. good luck. I just made chili ansd it smells so good. if you go to the recipe section they have more ideas.

Come on in, the water's fine.

Roasted eggplant - you can cut it in chunks, toss it in olive oil and garlic.

Baked eggplant - Cut it into 3/8 inch slices, spray cookie sheet. This would be a good first step for eggplant parmesan, rather than just layering it in raw.

Ratatouille (?spelling) - saute in a little olive oil garlic, onions and green pepper, then add chunks of eggplant and zucchini, let them soften a bit, then add a can of whole or diced tomatoes. Let it simmer a bit to soften and for the flavors to mingle.

In your quest to find the right diet, I think you'd love the sisters' book, 3 Fat Chicks on a Diet, because they detail tons of diets, explain who is best suited for each, and give hints on how to make them work. It's an awesome book!
