Grilled Pineapple with Chocolate Sauce
Ingredients:
1/4 cup coconut ribbons
8 pineapple planks, cut 1/2 inch thick, cores removed
1 ripe mango, cut into 1/2 inch cubes
1 Tbsp. fresh lime juice
2 oz. bittersweet chocolate, finely chopped
3/4 cup water
pinch of salt
Preparation:
Prepare charcoal for grilling; place oiled rack about 5 inches above embers. Preheat oven to 350F. Toast coconut on large baking sheet, shaking pan twice, about 12 minutes, until golden brown. Let cool on baking sheet.
Grill pineapple 8 minutes; turn and grill until pineapple is golden brown and softened, about 6 minutes.
Toss mango with lime juice.
Set heatproof bowl over saucepan with 1 1/2 inches of simmering water. Add ingredients; whisk until smooth.
To serve, divide fruit among 8 plates, top with chocolate sauce.
