Red face V8?

So I have a hard time keeping fresh veggies fresh. I was wondering if V8 REALLY is a good substitute for a serving of veggies. I have always loved V8..I would rather drink it than waste money on veggies that go bad because I only cook for myself.

Any opinions?

I don't think there is a good substitute for fresh veggies. Why don't you buy less? You may have to stop at the store a bit more often, but it will be worth it. Also, consider frozen veggies.

I don't think V8 is bad. However, watch out for the sodium.

I'm not a V8 expert since I don't like it, but I do agree to watch out for the high sodium, and I'm wondering if you get nearly as much fiber since it's just the juice.

I'd also suggest frozen veggies. Studies have shown that sometimes frozen veggies are actually BETTER for you than fresh since they are frozen at the peak of freshness, whereas fresh veggies are harvested and then packaged and then shipped around the country and then put out in the produce section to sit until picked up by a customer.

Cool. I always figured frozen veggies were just as bad as canned (not that either are particular BAD..just loss of nutrients)

I like V8 myself. It is high in sodium but since I don't have a problem with salt I don't care about that. It's thick enough that I can believe it does still have fiber. I'd certainly consider it to be a real vegetable.

It does have some, I see--according to their website, 2g per 8 ounces.

Personally, if you don't eat veggies regularly (for whatever reason), I think it's better than nothing, but I don't believe anything is a perfect substitute for the real thing, if that makes sense. But that's just me--and I don't really eat veggies OR drink V8

Oh and they do have a low sodium V8..I like it because you can really taste more of the vegetables. Not just the tomatoes LOL.

I agree Jill, it's better than nothing and atleast a place to start until I can get my act together and stop being to lazy to cook the things I buy LOL.

I love veggies, but I also tend to have to deal with a lot of spoilange because I'll forget about something in the fridge until it has dissolved, or I'll go overboard when shopping because "it all looked so good."

Hubby doesn't like many veggies, but he's willing to eat more in soups than any other way, so I make a lot of soup, mostly based on variations of the WW zero point soup. My favorite starts with equal parts fat free canned chicken broth and tomato juice or V-8 (I like the spicy V-8). Then I add dry seasonings like garlic and parsley and such, and whatever low carb veggies I can find, both from the veggie bin and the freezer. When I overshop the veggies, I usually end up making a HUGE pot just before the veggies are inedible, and just freeze the excess.

V8 - yuck! I also thought it would be good to drink many of my veggies, since I knew I wasn't getting enough. I couldn't force more than 2 or 3 ounces of V8 down before gagging. If you actually like the stuff, more power to you! Drink the low sodium version and you will be fine.

weweevil, your post made me laugh. I know I posted a recipe using it, but I actually have a tomato/V-8 juice phobia. Hot, especially if mixed with broth and veggies, it's yummy soup - however, cold it's evil incarnate. I've never actually been able to take more than a lip-dampening sip of the stuff. Obviously it's a mental thing, since I like as soup.

I'm soo not a veggie person, but I do drink the V8 splash instead. I cant do the regular V8, but at least its 1 serving veg and fruit. Then i eat lots of salad and that gets me to 5 servings.

If you're having a hard time keeping vegetables fresh, maybe you could buy those packages of pre-cut broccoli florets and stuff instead of a big ol' bulk of broccoli? I know they're more expensive though, which is odd since you're actually buying less...!

If you're having trouble keeping veges fresh, go for things like pumpkin, kumera/sweet potato (whereever ya come from) carrots, frozen veges, and not to mention fruit, I go to the supermarket every 3/4 days just go get fresh fruit. And did even when I wasn't trying to get slimmer.

V8 Juice is good, but I find steamed pumpkin and carrot with some frozen veges and some balsalmic dressing absolutly delicious!
